Ingredients
- zucchini - 400 g
- eggplant - 400 g
- potatoes - 400 g
- onions - 1 pc.
- carrots - 1 pc.
- Bulgarian pepper - 1 pc.
- vegetable oil - 5-6 tbsp. l
- tomato paste - 2 tbsp. l
- mayonnaise - 3 tbsp. l
- paprika - 1 tsp.
- greens - 20 g
- garlic - 15 g
- ground black pepper - ½ tsp.
- salt - 1 tsp.
- bay leaf - 1 pc.
- water - 300-320 g
Step cooking
- Prepare all the vegetables for the stew. Rinse approximately 400 g of zucchini thoroughly and remove the stalk with a knife. Rinse the eggplant 400 g and peel it carefully. Then also peel 400 g of potatoes, rinse it under running water and cut into small cubes, approximately 1 cm.
- Place the chopped potatoes in a deep pan and pour about 50-70 g of water into it. Stew the potatoes until cooked over medium heat under a lid.
- Peel one carrot and rinse it thoroughly under water, then cut into small cubes. Peel one onion, rinse and cut into thin rings.
- Pour about 5-6 tbsp into a separate pan. l vegetable oil. Heat it lightly, then place the chopped carrots with onions in a pan. Sauté the vegetables over low heat, stirring occasionally with a spatula.
- Rinse thoroughly 1 bell pepper, remove the stalk and core with seeds. Then chop the pepper into thin strips and send it to the carrots with onions. Shuffle everything with a spatula.
- Cut the eggplant and zucchini into small cubes, about 1 cm thick. Sliced vegetables to the remaining ingredients in a pan and mix everything thoroughly. Stew vegetables over medium heat for about 10 minutes.
- Meanwhile, peel 15 g of garlic and chop it with a knife. Then rinse under running water the herbs to taste, about 20 g, and also chop it with a knife. You can use parsley, dill, cilantro, etc.
- 2 minutes before the vegetables are ready, add 2 tbsp to the pan. l tomato paste and about 3 tbsp. l mayonnaise. You can use lean mayonnaise or any other of your choice. Sprinkle vegetables with 1 tsp. salt and 1 tsp. paprika, then add 1 bay leaf. Gently mix everything with a spatula. Stew vegetables for about 1 minute, stirring all the time.
- Pour potatoes into a pan to all vegetables and pour about 250 g of water. Gently mix everything with a spatula and simmer under the lid for another 2-3 minutes over low heat. After this time, add chopped garlic, herbs and about ½ tsp to the pan. ground black pepper. Turn off the heat, let the stew brew a little, and you can serve it to the table in a warm or chilled form.
