Step cooking
- First, 500 g of the liver must be thoroughly rinsed under running water so that no debris gets caught in the finished dish. After washing, lightly dry the offal with a paper towel. Pork liver is used in this recipe, but beef and chicken can be stewed in a similar way. With a sharp knife, cut the liver into small pieces and transfer to a deep bowl. Salt and pepper the liver with black pepper to taste, and mix everything well.
- We put about half a glass of flour in a deep plate and roll each piece of liver in it. It is recommended that you pre-bake the whole liver in flour so that the first and last servings are equally well fried. We lay out the liver boned in flour on a plate. The better you brew a liver, the juicier and softer it will be inside after roasting.
- We put the pan on the stove, pouring about 3-4 tbsp. l vegetable oil. Turn on the medium heat and wait until the oil warms up well. We put pieces of liver on a preheated pan and fry on each side for no more than 1-2 minutes.
- While the liver is fried, cut into half rings 3 medium-sized onions.
- Using a pair of forks or a spatula, transfer the fried liver to a small pan. We do not turn off the pan, but shift onion half rings to it and fry until a beautiful golden hue appears.
- Ready onions are transferred to a saucepan to the liver.
- In a deep container, mix 200 g of homemade sour cream with half a glass of cold water. All mix well with a whisk until smooth. Pour the resulting mixture with onion and liver. All products in a saucepan are seasoned to taste with pepper and salt. Mix thoroughly and cook over low heat. After boiling, simmer the liver with onions for 5-7 minutes.
- The stewed liver in sour cream is ready. The dish is very tender and soft. Buckwheat porridge or mashed potatoes with butter will go well with stewed liver.
