Ingredients
Cabbage | 1 average head of cabbage |
Odorless vegetable oil | 50 ml |
Carrot | 3 - 4 pcs. |

Meat (pork, beef or lamb) | 600 g |

Zira | 1 tsp |
Ground red pepper | taste |
Tomato paste | 2 tbsp. l |
Any greens (parsley, dill) | 2 branches |
Step cooking
- Prepare the ingredients and work surface. It is best to use a cast iron cauldron with a lid. If this is not the case, a pan with a thick bottom and non-stick coating or a deep pan will do. Heat the cauldron over medium heat for 2 to 3 minutes, then pour 50 ml of odorless vegetable oil.
- While the oil is warming up, chop the onion with a medium cube.
- Add the onion to the cauldron and fry for 3 - 5 minutes.
- At this time, cut the meat into small cubes and put in a cauldron.
- Stir occasionally, simmer for 10 minutes.
- Next, we will deal with spices. In order to more fully reveal the aroma of zira and ground red pepper, pour them into a dry saucepan and put on a strong fire. Fry the spices for a minute. When a little smoke goes and the spices start to smell, remove from heat. Pour the spices into the mill or put in a mortar and grind. Spices are ready.
- To the meat add 2 tbsp. l tomato paste, mix and simmer another 1 - 2 minutes. Instead of tomato paste, you can use mashed tomatoes.
- Only at this stage we salt to taste and reduce the heat to medium.
- Then cut the carrots into large slices and send to the cauldron to the rest of the ingredients.
- Next, let's take a cabbage. Shred it with straws and put it in a deep bowl. To make the cabbage juicier and softer, salt it and take it with your hands so that the cabbage starts up the juice.
- Pour the chopped spices to the cabbage, mix.
- We send the cabbage to the cauldron, cover it and simmer for 10 minutes so that the cabbage settles. If all the cabbage does not fit immediately, wait a bit, the cabbage will settle under the lid and you can add more.
- After 10 minutes, the cabbage decreased in volume, mix thoroughly so that all the ingredients combine well. If the cabbage is dry, you need to add a little water.
- Cover with whole cabbage leaves, a small plate and a lid. Simmer for 40 minutes until all ingredients are cooked.
- Put the finished dish on a beautiful plate, sprinkle with chopped herbs, at your discretion, and serve. Also, stewed cabbage can be served with sour cream. Enjoy your meal!
