Step cooking
- Soak 120 g of dry beans in advance with cold water. Allow to stand for at least 4 hours, or rather leave it overnight. After that, boil the beans until cooked. Depending on the variety of beans, it can take 1-4 hours to cook.
- Cut into thin strips 600 g of white cabbage.
- Rinse and cut in equal slices 600 g of mushrooms.
- Peel 150 g of onion and chop it into a small cube.
- Peel 120 g carrots and grate it on a coarse grater.
- Heat 5 tbsp in a pan. l vegetable oil.
- Put the chopped mushrooms and sauté them over high heat until a uniform golden hue.
- Put mushrooms on a plate and send chopped carrots and onions to the pan.
- Sauté the vegetables for 4-5 minutes, stirring regularly. Next, add chopped cabbage, 2 tbsp. l dried parsley and 2 tbsp. l tomato paste. Stir, add 2 tsp. salt.
- Stew the cabbage over medium heat without covering and stirring occasionally, for 10-15 minutes. In the almost ready cabbage, send the boiled beans, after draining all the liquid from it. Next, add the fried mushrooms and 0.5 tsp. ground black pepper. Stir and simmer all together for another 5 minutes.
- Serve the finished dish, sprinkled with chopped herbs.
Cooking recommendations
- Beans will cook faster if you do not salt it during cooking and add a pinch of baking soda.
- If the cabbage starts to burn, add a little vegetable oil. You can also add some water and cook under a closed lid.
- You can supplement the recipe by adding a little bell pepper, and for lovers of hot pepper - chili.
- Instead of tomato paste, the use of tomato juice or fresh, chopped tomatoes is permissible.
- Instead of dried parsley, you can take basil, oregano or a mixture of spices at your discretion.
- Serve this dish with fresh vegetables and salads, as well as baked meat or fish.
