Step cooking
- First, we unfreeze the fish: you need to do this in cold water for several hours. Do not try to speed up the defrosting process in any way, otherwise the fish will lose a lot of juice, its meat will become dry and tasteless.
- Dry the thawed fish with a paper towel, cut off the fins with scissors, and clean the scales, if any. We cut off the head and carefully make a longitudinal section of the abdomen to remove the insides.
- Once again, we wash the fish so that there is no blood left on it, and cut into portions.
- Prepare the marinade: pour 4 tablespoons of soy sauce, 3 tablespoons of olive oil into a bowl, put a few cloves of garlic through the press (this is half the middle head), squeeze the juice of half a lemon. Add a teaspoon of oregano greens. Grind in a coffee grinder a teaspoon of a mixture of peppers and also send to the marinade. Mix well.
- We take a large capacity - a bowl, pan or flat pike perch. Pour a little marinade into it, distribute it throughout the bottom with a silicone brush.
- We spread the sliced fish and top with the remains of the marinade. With light patting movements, the brushes drive it into each piece and distribute it so that it flows between them.
- We leave the fish to marinate for at least 30 minutes, but if you have the time, it is better if it stays in the marinade for an hour or two, or even more. At this time, we will prepare the side dish for our fish. Wash and peel 3-4 potatoes, cut them into circles a centimeter thick, fill with water and leave to wait in the wings.
- When the fish is sufficiently marinated, we take a high, rigid baking dish (it is better if it is glass or ceramic, but soft silicone will definitely not work). Lubricate the form with marinade and put pieces of fish in it, and next to it is potatoes, which we also coat with marinade.
- We cover the form with a sheet of foil, carefully fix the edges, creating a semblance of a tight-fitting lid. Preheat the oven to 180 degrees and send the form into it first for half an hour.
- After the specified time, we take out the form, remove the foil from it and put it back in the oven for another 15-20 minutes so that the dish gets a golden brown.
- From the remaining marinade, you can prepare a delicious fish sauce. To do this, pour it into a small saucepan, put on a stove, bring to a boil and evaporate over low heat to reduce the volume by about half. The sauce is served separately in a saucepan. It’s good for them to season the fish already during the meal. It is worth adding a little bit of everything, since it turns out to be quite salty.
