Step cooking
- We will prepare all the ingredients on the list and the work surface. You can use commercially available puff pastry or homemade instant puff pastry. It is prepared very simply and quickly, you just need to mix all the ingredients: flour, water, vinegar, eggs, cold butter and salt. Sprinkle flour on the working surface and roll out the dough 2 mm thick.
- Then we cut the dough with a sharp knife or pizza knife into strips 2.5 - 3 cm thick and 35 - 40 cm long. The longer the strip, the larger the tube. Choose the length yourself, depending on what size tube you want to receive.
- We wrap the strips with an overlap on metal cones and lay them on a baking sheet covered with parchment paper. If you do not have a special cone, then it can be done at home. From a thick cardboard roll a cone, secure with a stapler and wrap it with foil.
- Bake the tubes in a preheated oven at 180 degrees 15 minutes. They should turn out golden in color and well depart from cones. Thus, bake all the straws.
- We begin the preparation of the cream by pouring 75 g of sugar into a stewpan and pouring 20 ml of water, put on medium heat and heated to a temperature of 116 degrees. It is good to use a kitchen thermometer for this purpose. If this is not the case, then check the readiness of the syrup like this - raise the spoon, the syrup should drain with a thin thread. In a deep bowl add one protein, a pinch of salt and a pinch of citric acid. Beat with a mixer first at minimum speed, gradually increasing to maximum. You can whisk manually, but it will take a lot of time.
- Without ceasing to beat, pour syrup into a protein mass with a thin stream. We continue to whisk until the mass increases in volume and keeps its shape well. We put the finished cream in a pastry bag and fill the cooled tubes. From this amount of ingredients, approximately 12 tubes are obtained.
- We spread the crispy tubes with a delicate custard protein cream on a plate and enjoy.
