Step cooking
Cooking puff pastry
- To begin with, connect 100 ml of water, 1 tbsp. l vinegar 9% and 0.5 tsp. salt. Mix until smooth. Put in the refrigerator for a while. Sift 500 g of wheat flour into a deep bowl. On a coarse grater, rub 400 g of cold butter or margarine. Rub it with your hands until crumbs are formed.
- Pour in the liquid ingredients and quickly combine the dough, no need to knead. Wrap the finished dough with cling film and put it in the refrigerator for at least 3 hours, preferably at night.
Cooking Custard Protein Cream
- We begin to prepare the cream with the preparation of syrup. Pour 375 g of sugar into the pan and pour 100 ml of water. We put on the stove, without disturbing, bring to a boil and cook for 7 - 8 minutes on medium heat to a temperature of 120 degrees. Temperature can be measured using a kitchen thermometer. If you do not have this, then we make a test on a soft ball: we drop a few drops of syrup into ice water. If after that you can roll a soft ball, then the syrup is ready. After 7 - 8 minutes, add 0.5 tsp. citric acid, mix and cook for another 2 minutes.
- Beat the whites in the meantime. It is recommended to whip the proteins in a plastic bowl, then the cream will turn out more dense. It doesn't matter, chilled proteins, or room temperature. Beat the proteins at maximum speed, adding 8 g of vanilla sugar, to a dense and lush mass.
- Pour hot syrup into whipped squirrels in a thin stream and continue whisking. When the proteins begin to wind up on the whisk of the mixer, the cream is ready. Cream can be made chocolate, for this in 3 tbsp. l cream add 0.5 tbsp. l cocoa and mix.
Cooking tubes
- Sprinkle the table with flour and roll out the dough 4 mm thick. It is not necessary to roll out very thinly, since the lamination of the dough will disappear.
- With a knife, cut strips 2 - 2.5 cm wide and 20 cm long. We wind each strip of dough onto a metal cone. If you don’t have one, you can make such molds yourself. To do this, we make a cone out of cardboard, fix it with tape, and wrap it with parchment paper on top.
- We spread the tubes on a baking sheet covered with parchment paper. Grease each tube with yolk.
- We send to the preheated oven to 180 degrees for 15 minutes until golden brown. Free the cooled tubes from the cones and, using a pastry bag, fill the tubes with cream. Spread on a plate and sprinkle with powdered sugar.
