Step cooking
Dough
- Sift 300 g of wheat flour into a deep container and add a pinch of salt to it.
- Cut into small pieces or rub on a coarse grater 150 g of butter. Grind flour and butter into small crumbs. It is advisable to use a food processor for this, so that cold oil does not come in contact with warm hands, but if there is no food processor, use thick gloves and grind by hand.
- To 1 chicken egg, add 1 tbsp. l apple cider vinegar and 2 tbsp. l cold milk. Mix the ingredients until smooth.
- Pour the liquid mixture into the flour crumbs and knead the tough puff pastry, which we collect in a lump and put in the refrigerator for 2 hours (you can cover it with cling film), although it is best to stand all night.
Tubules
- We roll out the finished dough into a long rectangular layer with a thickness of 2-3 mm (several for convenience) and cut it into longitudinal strips 2-3 cm wide.
- Each of the strips is wound with a spiral on the shape for the tubes. Try not to stretch the dough much, because in the process of baking it can burst, and the tube will come out ugly.
- We spread the tube blanks on a baking sheet covered with parchment paper. Preheat the oven to 180ºС and send the tubes to bake for 10-17 minutes.
- Remove the finished tubes from the molds and set aside so that they cool. The tubes are moderately brittle, crunchy and very tasty.
Cream and serving
- In a deep container, cut 50 g of butter at room temperature.
- We take a blender and begin to whip the butter to a lush mass, adding a thin stream of Anglez liquid cream, 500 ml, which can be prepared at home from cream, eggs, sugar and vanillin or purchased ready-made.
- As a result, after whipping, a thick custard is obtained, which will melt in the mouth.
- We fill the confectionery syringe with cream and fill the cooled tube with a portion of it. Sprinkle cream with nut or chocolate crumbs, cinnamon, coconut flakes, or pieces of fruit.
- We spread the finished tubules on a serving dish and sprinkle them with powdered sugar on top. Serve with any fruit, berries, hot and cold drinks or ice cream.
