Step cooking
- To get started, prepare the fish sauce. Pour approximately 2 tbsp into a small container. l vegetable oil, add there 1 tbsp. l lemon juice, salt and pepper to taste. Add your favorite spices if desired. Next, peel two cloves of garlic, squeeze them into the sauce with the help of the garlic and mix thoroughly all the ingredients. If you don’t have a garlic mill - it’s not a problem, chop the garlic with a knife, but try to chop it as thoroughly as possible.
- After preparing the sauce, proceed to the preparation of vegetables. Peel one large or two small onions, cut them into half rings.
- Take 1-2 sweet bell peppers, core and peel the seeds. Cut the peppers into thin strips.
- Next, cut into small slices two large or several small tomatoes.
- Prepare a baking dish: cover it with foil, bend the free edge on the sides of the pan. Put the onion sliced in half rings at the bottom of the mold in an even layer.
- On top of the onion lay a layer of chopped bell pepper, and then a layer of tomato slices. If desired, you can add other vegetables, such as carrots, to the recipe. You can also bake fish with potatoes.
- Prepare the fish: rinse the cod fillet thoroughly under running water and cut into pieces. If you use whole fish for cooking, also rinse it, cut the fins and tail, peel, and then divide it into medium-sized pieces.
- Put the fish in a baking dish on top of the vegetables, then pour the previously prepared sauce.
- Tightly cover the baking dish with foil, wrapping its edges on the sides of the form, and send the fish and vegetables to the oven preheated to 200 degrees for about 25 minutes.
- Remove the mold from the oven, remove the foil and send the fish back to bake for another 5-10 minutes until a beautiful golden crust appears.
- Remove the finished dish from the oven, transfer to a plate, sprinkle with chopped herbs and serve. Serve cod baked with vegetables can be both with a side dish and as a separate independent dish.
