Chocolate sponge cake
- To prepare a biscuit, take a deep container and mixer. Measure 160 g of sugar, 10 g of vanilla sugar and 4 large eggs into a container. Beat with a mixer for 3-4 minutes. The mass should lighten and increase in volume.
- Sift 140 g of flour through a sieve and mix it with 1 tsp. baking powder. Next, kneading the dough with a spoon or spatula, add 35 g of cocoa powder and 70 g of flour. When half the flour is introduced into the dough, add the second half and mix well again. Do this in a circular motion, turning the bowl and raising the dough from bottom to top.
- Take a baking dish with a diameter of 20-22 cm. Cover the bottom of the form with baking paper.
- Put the dough into the mold and place the bake in the oven preheated to 180 degrees for 30-35 minutes. Readiness check with a wooden skewer. When the biscuit is ready, remove it from the oven and allow to cool completely. After that, remove the mold and remove the baking paper from the bottom of the biscuit.
Meringue
- For making meringues you will need a mixer and an absolutely dry container. Take 2 eggs and separate the whites from the yolks. Beat the whites with a mixer into the foam. In small portions, enter 120 g of sugar. Beat the mixture until white and a thick, stable consistency.
- Take a sheet of baking paper and cover it with a baking sheet. Draw a outline of the shape of the future cake on paper. Put the protein mass on the parchment, not reaching 1 cm to the edge of the contour.
- This is necessary so that in the process of baking and increasing in size, your meringue does not work out larger than the size of the biscuit. Place the pan in a preheated oven to 120 degrees for 60-80 minutes. Depending on the oven, the drying time may vary slightly. Do not be afraid to open the oven during the baking process to determine the further drying time. When the meringue is ready, cool it and gently separate it from the baking paper.
Cream
- In a mixer bowl, whisk 200 g of butter at room temperature. The oil should lighten slightly.
- Next, without ceasing to beat, add boiled condensed milk. For a more uniform cream, add condensed milk in several stages, in small portions. Beat until smooth.
Sugar syrup
Take a small pan or stewpan. Mix 200 g of sugar and 200 g of water. Bring to a boil while stirring constantly. Sugar crystals should completely dissolve. Allow the syrup to cool.
Chocolate glaze
- Melt 100 g of dark chocolate in the microwave or in a water bath.
- In liquid chocolate, add 50 g butter at room temperature. Stir the mixture until smooth and full of oil.
Cake assembly
- Take the backing for the cake and the dish in which you will serve the cake. Cut the chocolate biscuit into 2 cakes of the same thickness. Set aside 2-3 tbsp. l cream, it will be needed to align the cake. Visually divide the remaining cream in half.Put one half of the biscuit on the dish and soak it, pouring sugar syrup.
- Next, put half the cream on the cake. Spread evenly in the same layer.
- Put 40 g of roasted peanuts on the cream.
- Next, put the meringue cake and grease it with the remaining cream on top. Sprinkle the cream with the remaining peanuts, put the second part of the chocolate biscuit.
- Soak the sponge cake on top with sugar syrup, but not very abundantly so that the moisture does not pass on the meringue.
- With cream that remains, line the sides of the cake. Pour the cake with chocolate icing on top. Decorate as you wish. Let the cake stand for 2-3 hours to soak.
