Ingredients
- Chicken eggs - 3 pcs.
- Premium wheat flour - 400 g
- Vegetable oil - 3 tbsp. l
- Sugar - 200 g per dough + 2 tbsp. L in cream + 130 g in syrup
- Dough baking powder - 1 tsp.
- Kefir - 200 ml
- Soft cottage cheese - 500 g
- Salt - 1/3 tsp
- Cream 20% - 200 ml
- Powdered Sugar - 100 g
- Vanilla sugar - 1 tsp.
- Water for syrup - 250 ml
- Gelatin - 10 g
- Orange juice - 300 ml
- Peaches - 3 pcs.
- Grapes - 150 g
Step cooking
- First you need to put all the products for the test so that they are at room temperature. We proceed to the preparation of the biscuit. We break the eggs into a deep bowl, add sugar and beat with a mixer in a homogeneous lush mass, which should increase by 2-3 times. If you don’t have a mixer, you can beat the eggs with a regular whisk.
- We turn on the oven in advance to heat up to 190 degrees. Pour kefir, vegetable oil into a bowl and again mix everything well with a mixer. Instead of vegetable oil, you can use butter. Sift the flour with baking powder and add to the dough in several stages. Mix well with a whisk. The dough should turn out by consistency, like liquid sour cream.
- We take a shape with a diameter of 24 cm, cover the bottom with parchment and grease with a thin layer of vegetable oil. No need to lubricate if you are sure that the parchment is of good quality.
- We shift the dough into the form, evenly distribute and send to bake in the oven for 35-40 minutes. If you have an electric stove, then you can turn on the top-bottom and put on an average level. We check the readiness of the cake with a skewer or a toothpick.
- We take out the finished biscuit from the oven and let it stand for 5-7 minutes. We pass the knife along the edge of the biscuit so that it is well separated from the mold. It's not scary if the cake turned out to be convex, we still need a crumb in the future.
- We take out the cake from the mold and put it on the grill so that it cools completely. It is better to cook a biscuit in advance for a day, so that it cools down and infuses in the refrigerator. But you can just let it stand for an hour or two, so that it cools down.
- If the cake is convex, cut off the top with a curly knife to align it.
- Cut the remainder of the cake into two equal parts. It turns out two equal cakes. From the cut top we make crumbs in order to sprinkle the sides. This is best done with a blender, but you can do it with your hands.
- For cream, pour the cottage cheese into a bowl, add icing sugar, vanilla sugar, and interrupt with a blender.
- Pour cream into another bowl, add sugar and beat at high speed with a mixer. For cream to whip well, they must be straight from the refrigerator.
- Combine whipped cream with cottage cheese and mix well to get a fluffy and airy cream. Put the cream aside and make fruit.
- For syrup, mix water with sugar, bring to a boil, constantly stirring. When the sugar has completely dissolved, set the syrup aside. Grapes can be taken varieties of quiche-mish, then you just need to cut it in half.
- Cut the peach in half, scroll, and then the stone is easily removed. We clean it from the skin and cut into thin slices.
- We put part of the cream in the refrigerator. We will lubricate the sides of the cake with them. The rest of the cream is mixed with grapes. In a removable form, spread the first cake and pour the syrup on top.
- Then spread the whole cream and level it with a spatula.
- We spread the second cake on the cream and press it with our hands so that the cream is evenly distributed. Top with the remaining syrup.
- Pour gelatin with cold water, stir and leave to swell for 10 minutes.
- Put the swollen gelatin in the microwave for 15 seconds to melt it. We mix orange juice with gelatin and mix well. We spread peach slices in a circle and put in the refrigerator.
- We take it out of the refrigerator, fill it with a small layer of orange jelly and put it in the refrigerator.
- When the cake has frozen a little, take it out of the refrigerator and fill the rest of the jelly with layers. Once the cake has frozen, take a knife and draw it between the walls of the mold and the cake. We take out the cake and arrange the sides with cream and crumbs, put in the refrigerator.
- Cut the frozen cake into pieces, put it on plates and serve.
