Ingredients
- sugar - 520 g
- egg whites - 5 pcs.
- peanuts - 130 g
- vanilla sugar - 2 sachets
- egg yolk - 1 pc.
- milk 3.2% - 100 ml
- butter - 200 g
- cognac - 1 tbsp. l
- natural cocoa powder - 1/2 tsp.
Step cooking
Cooking cakes
- Roast 130 g of peanuts in an oven preheated to 180 ° C for 15 minutes.
- Grind peanuts with a blender.
- Beat egg whites in the amount of 5 pieces until solid peaks.
- Continuing to whisk, gradually introduce the resulting mass of 320 g of sugar and 1 packet of vanilla sugar. Beat the ingredients for another 7 minutes.
- Put a tablespoon of cream in a pastry bag.
- To the remaining mass, add chopped nuts. All mix thoroughly and shift 1 tbsp. l walnut cream in a separate container.
- We draw 2 circles with a diameter of 25 cm on parchment and carefully distribute the protein mass over them.
- Next to the cakes we spread small cakes, and from the remains of the cream we form figures for decoration.
- Bake the cake for 2 hours at a temperature of 100 ° C.
Cooking cream
- In a stewpan we combine 1 egg yolk, 100 ml of milk and 200 g of sugar.
- Bring the contents of the stewpan to a boil and, stirring constantly, boil the syrup until thickened.
- Beat 200 g butter and 1 sachet of vanilla sugar.
- Without ceasing to whisk, we introduce sugar syrup into the resulting cream.
- There we add 1 tbsp. l cognac.
- In a separate container, mix 1 tbsp. l finished cream with 1/2 tsp natural cocoa powder.
Making a cake
- Put the 1st cake on the dish and coat it with cream.
- We also act with the 2nd cake.
- Coat the sides and top of the cake.
- We break pieces of meringue and sprinkle the resulting side crumb of the product.
- Decorate the cake with chocolate cream and meringue figures.
- We send the product to the refrigerator for 1 hour.
