Step by step recipe
Preparing a puff base
- Pour 450 g of sifted flour into a bowl and rub 250 g of margarine into it. It should be cold, but not frozen, so that it rub well and do not crumble.
- Grind the mixture of flour and margarine into crumbs.
- In a separate bowl we combine 1 chicken egg, 150 ml of water, 1 tbsp. l vinegar and a pinch of salt. Mix until smooth.
- Pour the mixture into flour crumbs, gradually stir and collect the resulting dough into a lump.
- We do the following manipulations several times with a lump of dough: knead it with our hands to a more or less flat state, wrap the edges inward, bend it in half and knead again. We collect the dough in a lump, wrap it in a cling film so that it does not wind off, and send it to the refrigerator for 1 hour.
- After the specified time, we take out the dough and roll it into a thin cake. We cut it in the form of a baking sheet.
- And then cut into strips of 1.5-2 cm wide. We don’t throw out the dough, because they are useful for decorating the cake.
- We cover the baking sheet with parchment paper and put strips of dough on it. Bake in a preheated to 180ºC oven for 20-25 minutes.
- The obtained sticks are cooled to an acceptable temperature before the next cooking step.
Cream
- Beat soft butter (300 g) at room temperature for 5 minutes with a mixer to increase in volume.
- Add 1 can of condensed milk to it and mix until smooth.
Serve the cake
- We put a wide piece of cling film on the work surface and a little grease with cream for the stability of shortcakes.
- Spread a layer of puff sticks and grease them with cream.
- Repeat the procedure until the ingredients run out.
- Now tightly wrap the cling film, forming a roll. First, leave it at room temperature for 1 hour, and then send it to the refrigerator for 7-8 hours or at night.
- We unfold the cling film and sprinkle the cake with crumbs from the prepared scraps of dough or extra sticks.
- In the context of the finished cake will really resemble a log with the original annual rings.
