You can cook a delicious and tender cake of zucchini with tomatoes, garlic and mayonnaise according to a step-by-step recipe with a photo:
- To begin with, I wash all the vegetables, herbs and running water under running water. Rub the zucchini on a coarse grater into a deep bowl. You do not need to clean them from the skin beforehand, since only young zucchini is usually used for this recipe.
- Grated zucchini, salt and leave for 10-15 minutes, so that they highlight the juice. Meanwhile, we chop the dill very finely.
- In tomatoes, remove the core and cut into thin circles.
- Peel the garlic and squeeze through a press into a bowl of mayonnaise. Mix well and add a little chopped dill.
- Pour zucchini into a colander to juice stack. Squeeze a little of the remaining liquid with your hands. After that, the volume of zucchini is almost halved. We shift the squash into a deep bowl. We drive eggs into them, pour the remaining dill, salt and pepper. Add the flour and mix well until smooth.
- We put the pan on the fire and pour vegetable oil.
- On a heated frying pan, spread the zucchini dough, level it with a spatula. Korzhik should be about 1 cm thick.
- After the cake has been fried on one side, gently turn it over to the other side and continue to fry until cooked.
- Thus, we fry all the other pancakes from zucchini. We lay the finished cakes one by one to cool on plates. Put the bottom ready squash pancake on a dish and grease it with a mixture of garlic and mayonnaise. On top we lay a layer of tomato circles. Put the following cake on the tomatoes. Lubricate with garlic-mayonnaise sauce and spread the tomatoes on top. We do the same with the rest of the layers.
- We grease the last top squash cake with sauce, put tomatoes, decorate with greens and mayonnaise. Cut the finished cake into portioned pieces and serve. Enjoy your meal!
