Ingredients
- wheat flour - 200 g
- eggs - 1 pc.
- sugar - 105 g
- honey - 40 g
- butter - 50 g
- cream cheese - 300 g
- confectionery white chocolate - 200 g
- fat cream - 200 g
- raspberry puree - 100 g
- corn starch - 1 tsp.
- soda - 0.5 tsp.
- salt - a pinch
Step cooking
Cooking cakes
- In a deep saucepan, mix 80 g of sugar, 1 egg, 40 g of honey and a pinch of salt. Mix everything with a whisk until smooth.
- Add 50 g butter to the resulting mixture and send the stewpan to medium heat.
- Bring the mass to a boil, remove from heat, add 0.5 tsp to it. soda and mix well.
- Allow the mixture of ingredients to cool and gradually introduce 200 g of sifted wheat flour into it.
- We spread the dough on the work surface and continue to knead it with your hands.
- We wrap the finished dough in a bag and send it to the refrigerator for 2 hours.
- We divide the dough into 2 parts and roll them into a layer 3-4 mm thick.
- Lightly dust each layer with flour and use a stencil to cut out 2 copies of the required numbers. From the remnants of the dough we cut out small hearts, which we will use as decoration.
- We prick each digit with a fork and send the blanks to the oven preheated to 170 ° C for 8-10 minutes.
Cooking cream
- Pour 200 g of white confectionery chocolate into a deep container.
- We heat 200 g of fat cream and fill them with chocolate.
- Mix everything and punch with a submersible blender to an emulsion state.
- We cover the ganache with cling film and put it in the refrigerator for 8 hours.
- Lightly beat with a mixer 300 g of cream cheese.
- Pour cold ganache into the cottage cheese and continue to whip the ingredients with the mixer at low speed.
Cooking Berry Jam
- In a deep saucepan, mix 1 tbsp. l sugar, 1 tsp. starch and 100 g raspberry puree. Mix everything until smooth.
- With constant stirring, bring the mashed potatoes to a boil and keep it on fire for another 1 minute. Let the jam cool completely.
Cake assembly
- We shift the cream into a pastry bag with a round nozzle and drop the surface of the first batch of numbers with drops.
- The remaining gaps are filled with raspberry jam.
- Cover the cream with a second batch of numbers.
- Decorate the upper numbers with cream.
- We decorate the surface of the cake with hearts and any other sweets at your discretion (you can use meringues, marshmallows and curly candies).
