Kefir 2 stack
Vegetable oil 2 tbsp. l
Baking soda 1/2 tsp
Salt big pinch
Wheat flour 900-1000 g

In order for the dough to rise well, kefir must be warmed up. You can also remove kefir from the refrigerator in advance so that it gradually warms up to room temperature.

In parts, we introduce the flour into kefir and begin to knead the dough. The total amount of flour may vary depending on the density of kefir and the characteristics of the flour itself. Therefore, you need to navigate the test. It should not be too soft or too tight. Knead everything thoroughly so that there are no lumps left. When the dough begins to detach from the dishes, you can put it on a work surface or a silicone baking mat and knead it by hand. Strongly beat flour with dough is not necessary.

  4. As soon as the dough stops sticking in the work surface and hands, transfer it to a clean plastic bag and let stand for about 1 hour. Then we gently crush, return to the package and leave for another 30 minutes. After that, we divide the finished dough into several parts, according to the number of pizza we plan to cook. From the listed volume of dough ingredients, 3-4 pizzas are obtained, depending on its diameter and the thickness of the cake. This dough can also be prepared for future use and stored in a freezer, previously placed in a container or plastic bag. Before making pizza, you need to defrost it and knead a little. Then it should be rolled into a thin layer, greased with sauce, put the filling, sprinkle with cheese and put in a preheated oven.
