Step cooking
Prepare the products
- First, peel the two medium onions and the head of garlic.
- We cut both ingredients into pieces of arbitrary shape. It doesn’t matter how you cut these ingredients, because by the end we will grind everything with a blender, the main thing is that the vegetables can be fried to the desired consistency. We measure 1 kg of tomatoes, thoroughly wash the fruits with running water and dry them with paper towels. In the area of the stalk on each tomato we make a shallow cruciform incision. We dip the tomatoes in boiling water for literally 1 minute, and then take them out and drop them in a container with cold water.
- Remove the peel from each fruit by pulling the skin in the incision area. We cut a stalk from peeled tomatoes and cut each fruit into four parts.
- We thoroughly wash 5 branches of fresh basil, and then chop them coarsely with a knife.
Cook soup
- Pour 30-40 ml of olive oil into a pan with a thick bottom.
- As soon as the oil warms up strongly, put the chopped onion and garlic on it.
- Fry vegetables over medium heat with vigorous stirring until onion appears transparent. Add the chopped basil and tomatoes to the same place, after which we stir everything thoroughly.
- Reduce the heat to below average and leave the products to stew without a lid for 10-15 minutes. Do not forget to periodically mix the contents of the pan so that the products do not burn. Pour about 200-300 ml of bottled water into the boiling vegetable mass and stir everything thoroughly.
- After boiling again, salt, pepper the soup to taste and add 10-15 g of dried oregano.
- We cover the pan with a lid and boil the product for another 10 minutes. Allow the soup to cool slightly, and then grind it with a hand blender until a homogeneous consistency.
- Pour the soup into plates and lightly sprinkle with olive oil.
