Ingredients
- Chicken stock - 300 ml
- Coconut milk - 250 ml
- Chicken Breast - 500 g
- Champignon mushrooms - 200 g
- Cherry Tomatoes - 200 g
- Onion - 1 pc.
- Hot Thai Chili - 1 pcs.
- Parsley - 20 g
- Galangal 1 pc.
- Lemongrass Root - 2 pcs.
- Salt - 1/2 tsp.
- Fish sauce - 1 tbsp.
- Sugar - 1 tsp.
- Rice vinegar - 1 tbsp. l
Step cooking
- To prepare the soup, prepare all the necessary ingredients. Rinse 200 g of champignons, 200 g of cherry tomatoes, 1 chili pepper, 1 galangal, 2 lemongrass roots and 20 g of parsley. Cut the galangal into large pieces. Peel the lemongrass and slice 2 cm diagonally.
- Cut champignons into large pieces. Cut the cherry tomatoes in half.
- Peel a small onion and cut into 4-6 parts.
- Finely chop the parsley with a knife.
- Take 500 g of chicken breast, peel and separate the meat from the bone.
- Chicken cut into thin slices.
- Pour 250 ml of coconut milk into the pan, add chopped galangal, lemongrass, and chili pepper, cut in half.
- Bring the milk to a boil over low heat. Next, add chopped chicken and 300 g of broth. Cook the meat for 10 minutes and add the cherry tomatoes, onions and mushrooms. Mix everything.
- Add to the soup 1 tbsp. l fish sauce, 1 tbsp. l rice vinegar, 1 tsp. sugar and ½ tsp salt.
- Boil for another 5 minutes, cover and remove from heat. Serve Tom Kh soup hot. Enjoy your meal.
Cooking recommendations
- To make Tom Kh soup, you will need a set of special spices, which can be found in large supermarkets.
- Soup broth can be cooked from bone and skin from chicken breast.
- Rice vinegar can be replaced with lime juice or apple cider vinegar.
- Serve the soup immediately after cooking to preserve the structure of tomatoes and the crunch of mushrooms. Before serving, you can remove galangal, lemongrass and chili from the soup.
