Step cooking
Prepare the fish
- First, thoroughly rinse 2 kg of silver carp with cold tap water. After the excess liquid drains, carefully clean the fish from the scales.
- Gently remove the gills and re-thoroughly wash the fish. With the sharp end of the knife we pierce the skin on the back at the head of the silver carp, after which we make a deep incision almost to the tail. Gently deepen the incision by cutting ribs on one side. We take out the insides through a deep incision, then thoroughly wash the fish inside and dry it with paper towels.
Pickle fish
- Separately, mix sea or table salt, thyme, fennel, basil, ground paprika and ground allspice. The amount of each spice is determined independently, focusing solely on your own taste.
- Silver carp on both sides and inside we rub thoroughly with the cooked spicy mixture of dry spices.
Collect the dish
- In a small saucepan, boil 150 g of buckwheat in a standard way. Do not forget to salt and pepper the porridge in accordance with your own taste preferences.
- We line the foil on a baking sheet, and then we set on it the pickled silver carp with the abdomen down. Through the hole made in the back, we stuff the fish with hot buckwheat porridge, evenly distributing it throughout the silver carp. Around the fish lay out 2-4 stars of star anise and 2 sprigs of fresh rosemary. Put the remaining two branches of rosemary inside the fish, on top of the porridge.
Bake product
- We heat the oven to a temperature of 180-190 ° C.
- We send to the preheated oven stuffed silver carp.
- Bake the product for one hour.
- We spread the baked fish on a flat oblong dish and serve on the table in a warm form.
