Step cooking
- Pour 0.5 l of kefir into a bowl.
- Add 1 teaspoon of salt (without a slide).
- Sift flour (700-800 g) in a separate bowl. Gradually we begin to introduce flour.
- After adding a little flour, stir until smooth and continue to add flour.
- All this is mixed, brought to the desired consistency, and so on.
- After pouring the remaining flour, knead the dough. The kneading process itself takes 10 minutes. The dough is soft, homogeneous, not sticky to the hands. We put the dough in a bag and send it in the refrigerator for 1 hour. After an hour, you can sculpt manti.
Cooking options
How to sculpt manti: roll out the dough into a layer and cut into small squares, put the filling in the center of each small square.
1 method "Classic":
- We connect 2 angles diagonally to the center.
- Turning the remaining 2 corners a little to the center, pinch the resulting edges and connect them to each other.
2 way "Sack":
- Connect the opposite angles diagonally to the center in pairs.
- Formed 4 corners also pinch to the center.
3 way "Basket":
- Starting from one corner, gradually collect the dough to the center with folds in a circle.
- In the center, an open filling is obtained.
4 way "Convert":
- Connect the opposite angles diagonally to the center in pairs.
- Turn the dough out in the corners and gently pinch them.
5 method "Pigtail":
- Starting from one corner, alternately from the right, then from the left side we wrap the dough from the edges to the center (similar to braiding).
- Mantas are long.
6 way "Flower":
- Connect the opposite angles diagonally to the center in pairs.
- Turn the dough out a little in the resulting corners and combine adjacent corners (2 corners from above and 2 corners from below).
7 method "Rose":
- With this method of sculpting, the dough is not cut into squares, but we roll out pieces of dough into long strips. In the center of each strip along the entire length we put the filling.
- Fold the dough in half on the narrow side, pinch the edge.
- We turn into rolls (pinch side up).
- In the resulting rose, expand the petals.
You can also prepare manti in several ways.
- According to the classic recipe, manti is cooked in a mantle. Lubricate the bottom of the pan with a brush with vegetable oil. The bottom of each mat is also dipped in vegetable oil, poured into a bowl. We lay the manti at a certain distance from each other so that they do not stick together.
- We put a pot of water on the stove. As soon as it boils, we install a mantle cooker with manty on it, covering it with a lid. Cook manti for 45 minutes. Manti can be served with mayonnaise, ketchup and other sauces.
- Manti can be cooked in a slow cooker. To do this, pour about 1 liter of water into the multicooker bowl. We put a special device for steaming. As in the previous method, grease the bottom with sunflower oil. We spread the manti. Close the lid of the multicooker and set it to the “Steam” mode, and cook for 40 minutes.
