Step cooking
Dough
- Pour 1 stack into a large bowl. kefir, add 0.5 tsp. soda. Stir well and let stand for 1 minute so that the kefir extinguishes the soda.
- Next, add 0.5 tsp to kefir. salt, 1 tsp sugar and 1 yolk. You can add a whole egg, but it is better to take only the yolk. Mix well again.
- Sift one cup of flour through a sieve and add to the kefir mass. Stir well until smooth and add a second glass of flour.
- When the dough becomes hard to knead with a spoon, knead it with your hands, lubricating them in the process of 10-20 g of vegetable oil. Do not try to pour in all the oil indicated in the recipe, it is only necessary so that the dough does not stick to your hands.
- When the dough is kneaded, cover it with a towel or film and leave for 20-30 minutes. After 20-30 minutes, the dough is ready for molding.
Filling
- Take 500 g of white cabbage and chop it thinly.
- In a pan with a thick bottom, melt 50-70 g of butter and add chopped cabbage to it. When the cabbage becomes soft, add 1 tsp to it. ground paprika, 1 tsp. salt, ¼ tsp black pepper and 1 tsp. Sahara. These proportions are relative, so try the filling, bringing it to your taste.
- Continue stewing the cabbage for another 5 minutes. It should become soft, but not fall apart. In order for the filling to cool faster, transfer it to another container and add 3 boiled eggs, chopped on an egg slicer or grater, and 50 g of chopped greens. Mix everything well. The filling is ready.
Cooking pies
- Before molding the pies, it is necessary to heat the cooking oil. To do this, pour 300 g of vegetable oil into a pan with a thick bottom and place on a stove over medium heat.
- Lubricate the surface on which the pies will be formed with vegetable oil. This is done so as not to mix flour into the dough. Divide the dough into 12-15 identical pieces, depending on the size of the pies.
- Blind the dough into balls and roll out round cakes from them. Put the filling on one edge of the dough cake, cover it with the other edge of the dough and connect the edges.
- In order to check the readiness of cooking oil, dip a wooden spoon, skewer or toothpick into it. If the bubbles went, then you can start to fry the pies.
- When dipping pies into hot oil, be very careful not to get burned.
- Fry the patties over medium heat for 2-4 minutes on each side. Cakes should acquire a ruddy, golden hue. Remove the finished pies from the pan and lay them on a paper towel in order to remove excess fat.
