Step cooking
Knead the dough
- First of all, I thoroughly wash 4 potatoes, and without peeling them, we send them to cold water. Cook the tubers in their skins until ready. In the process of cooking, add a couple of pinch of salt to the liquid. We take the boiled potatoes out of the water and allow it to cool to a warm state, after which we remove the peel. Grind the peeled and cooled vegetable through a fine sieve.
- Add ground black pepper and salt to the mashed potatoes, focusing on your own taste.
- Sift 50 g of premium wheat flour, and then send it to the potatoes.
- Beat one chicken egg separately, and then pour the egg mixture into a bowl with the rest of the ingredients.
- Knead a steep homogeneous dough, first using a spoon, and then continue the batch with clean hands.
We form and cook dumplings
- We divide the finished dough into two equal halves. We roll one part of the dough into a bundle with a diameter of 2.5-3 cm. Cut the potato sausage into small pieces.
- From each piece of dough we form oval dumplings.
- We send a pot of water to medium heat. Salt the liquid and bring to a boil. We send the formed products into boiling water, where we cook for 2-3 minutes after boiling again. During cooking, dumplings are slightly stirred so that they do not stick together and do not stick to the bottom.
- In a small container, melt approximately 50 g of butter. Thoroughly wash two or three branches of parsley, then dry them on a paper towel, and then finely chop with a sharp knife. We remove the finished dumplings from the water with the help of a slotted spoon, and put them on plates. We serve a potato dish, pouring it with melted butter and sprinkled with chopped herbs.
