Step cooking
- To prepare a soft yeast dough, you will need to heat 250 ml of kefir in a separate bowl. It should be warm enough, but not hot.
- To kefir add 2 tbsp. l granulated sugar and 12 g of dry yeast (1 tbsp. l. without a slide), mix thoroughly and leave for 5-7 minutes so that the yeast begins to "work".
- After the required time has elapsed, add ½ tsp to the yeast and kefir bowl. salt and 120 ml of odorless vegetable oil. If you take the smelling oil, it can give an unpleasant bitter taste.
- Sift 420 g of flour into a separate bowl, and then start adding it to the kefir-yeast mixture in several stages, mix the ingredients thoroughly to prevent the formation of lumps.
- Knead the dough in a bowl or on a table. It should be soft, but not stick to your hands.
- Form one large ball from the dough, put it in a bowl and cover with a towel. Leave to approach for 1-1.3 hours in a warm place.
- When the dough is suitable, it will increase in size several times, knead it a little and start cutting for further cooking. This dough is perfect for making pies or regular buns.
- For buns, it must be cut into identical small pieces, rolled into circles, and then crushed a little to make a tortilla. In the middle, you can put any filling you like, however, it will be easiest to put boiled condensed milk. Next, connect the edges of the tortillas and close them well, then put them on the prepared form with the seam down. Thus, blind all other cakes, placing them at a small distance from each other. Cover the buns with a towel and leave them for another 20 minutes in a warm place. Next, grease the tops of the rolls with a beaten egg so that the top is golden.
- Buns should be baked at a temperature of 180 degrees for 20-25 minutes. Cool the pastries on the wire rack, and then decorate them with icing sugar. Do not sprinkle the rolls with powdered sugar while they are hot, otherwise it will simply dissolve.
