Fresh dough for dumplings in the panason bread machine (panasonic) can be made in the "Dumplings" mode. But there is one caveat: in the instructions for many models of the Panasonic bread maker, they recommend adding more eggs to the dumpling dumplings than to the dumplings. That is, if in the recipe book for dumplings one egg is indicated, then at least two should be put on the dumplings.
You will need:
- wheat flour - 450 g;
- salt - 0.5 teaspoon;
- water - 160 ml;
- chicken eggs - 2 pieces.
Cooking
- Measure out a glass of water, break the eggs into it and add salt. Mix well until the salt and eggs are completely dissolved (the solution should become cloudy).
- Pour the solution into the mold. Do not forget to install a stirrer on the axis of the form (it is also called a scapula, a flag). If desired, you can add a tablespoon of vegetable oil - with it the dough will be more elastic and less stick to your hands.
- Pour the sifted flour - it should lie neatly on the surface of the water, that is, nothing needs to be mixed.
- Close the lid and set the Dumplings mode. Kneading will last 20 minutes.
- At the end of the cycle, try the finished product for stickiness: if it lags behind the walls of the mold, add a tablespoon of flour and put it into the Dumplings mode again (or knead manually).
- After kneading, leave the dough in a bread machine under a closed lid for 1 hour to completely swell gluten and gain dough elasticity.
The recipe in the Mulineks bread machine
The dumpling for dumplings in a Mulinex bread machine is kneaded in different modes, depending on its model. This can be the mode “Pizza dough”, “Dough”, etc. For most Mulinex bread machine models, the whole process takes 1.5 hours - it may seem a long time, but during this time the machine properly mixes the dough and insists it. So after the end of the cycle, you can immediately start making dumplings.
You will need:
- flour - 4.5 cups (the volume of dishes - 200 ml);
- chicken egg - 1 piece;
- water - 400 ml;
- vegetable oil (sunflower or olive) - 1 tablespoon;
- salt - 1 teaspoon.
Cooking
- Pour the vegetable oil in the form of a bread machine (it is better to always pour the oil directly on the mixer - this will facilitate the work of your assistant).
- Dissolve salt and egg in warm water, then pour this solution into a mold.
- Pour the sifted flour on top.
- Close the lid, set the "Dough" mode and press the start. The whole cycle of kneading and settling will take 1.5 hours. During this time, you can just cook the filling.
Kefir dough
Dumplings will be more tender if the dough for them is kneaded in sour milk. This is especially true for berry fillings (for example, cherries). The dough for dumplings on kefir can also be kneaded in a bread machine.
You will need:
- flour - 400 g;
- kefir 2.5% - 200 ml;
- chicken egg - 1 piece;
- salt - 1 pinch.
Cooking
- Mix warm (!) Kefir with egg and salt, pour into the form of a bread machine (as you understand, kefir in this recipe replaces water).
- Sift the flour and pour it into the mold.
- Set the "Dough" mode (or another suitable one, depending on the model). It will be mixed for 20-30 minutes, then it must be left to swell in the bread machine or on the table, covered with cling film (in some bread machines the “Dough” mode already implies the settling of the dough and takes at least 1.5 hours).
Important points in the batch of dough in the bread maker
In order for the dumpling dumplings in the bread machine to always become soft, elastic, and make delicious dumplings with any filling from it, a number of rules must be observed:
- always sift the flour before pouring it into the mold;
- water should be warm (not cold, so that all the ingredients combine well);
- although a certain temperature condition is created in the bread machine, still do not put it on a draft so that cold air does not enter the ventilation openings and the temperature inside the device does not decrease;
- check if the stirrer is on the axis of the mold;
- firmly insert the form so that its elements properly contact the elements of the device itself.
All bread machines, as well as their hostesses, are individual, and often an individual approach is needed to the device. There are times when things are not going very smoothly, but these nuances can be easily dealt with.
- The ingredients are not going to lump. If the mass is too loose and does not form into a homogeneous substance, add a little water. It should be added a little, literally a teaspoon, while mixing.
- After kneading, the mass is too liquid. Add a little flour (1-3 tablespoons). If you notice this at the end of the mixing cycle, simply turn on the “Dough” mode again.
- The bread machine does not knead. When you turn on the kneading mode, immediately pay attention to whether mixing of products occurs. If the ingredients do not move, then you forgot to put the mixer, or the shape does not fit snugly to the bottom of the stove. It is very easy to put the mixer - just push the part onto the axis without removing the products from the mold. The quality of the test will not be affected.
This miracle machine not only saves time. Thanks to her, you will get perfectly mixed dough, and after kneading you will not have to wash the table from flour and dried lumps.
