Some of the classic dough seems harsh - I would like to be softer and more elastic, and to roll out well, others just want to save on ingredients, while others really like the good taste. We will look at different ways of cooking without eggs, including not quite ordinary ones. It remains only to choose the one that you like most.
Basic recipe. Lean dough
You will need:
- flour - 3 cups;
- chilled boiled water - 1 cup (maybe a little more depending on the quality of the flour);
- vegetable oil - 2 tablespoons;
- salt - 1 teaspoon, with a slide.
Cooking
- Combine the flour with salt, pour water.
- Stir the ingredients manually, not too zealous, and leave for half an hour (at this time gluten will swell).
- Knead the dough for no more than a minute.
- Add vegetable oil and knead until completely absorbed. The mass should be soft and slightly stick to the work surface.
It turned out the dough for dumplings with potatoes without eggs. Its consistency is such that you can immediately start sculpting. But if you have the time, it is better to put it in a bag or in plastic wrap and put it in the refrigerator for 1.5 hours, and then it will become very malleable.
The same method can be used for kneading in a bread machine. To do this, use the option “Dumplings”, or “Pizza”, or “Kneading the dough” (depending on your model), pouring salt water and butter, and sifting flour on top. After taking out the dough, put it in a bag and let it lie for about an hour.
In Ukrainian
It is believed that the real Ukrainian dumplings are made not on water, but on kefir. Dumplings with cottage cheese love everything, so this dough can be used in this case. This recipe for eggless dumplings also involves the addition of soda. The dough will be very soft and airy, and the dish will cook quickly. After cooking, the products become voluminous and with rather thick “walls”, but unusually tender and tasty.
You will need:
- flour - 3 cups;
- water - 1/3 cup;
- kefir - 2/3 cup;
- soda - 1 teaspoon (without a slide);
- salt - 0.5 teaspoon.
Cooking
- In a bowl, combine flour, salt and soda.
- Add water to kefir (to the edge of the glass) and mix until smooth.
- Pouring the resulting liquid into the flour, knead the dough. It should not be too stiff and not sticky to the hands.
- Soak for 20 minutes.
- Blind the dumplings.
- Put the products in a spacious pan filled with 2/3 boiling salted water, and after surfacing and increasing in size, keep in the water for no more than 1 minute.
Milk dough. Step by step recipe
Great dumplings will come out if you use dough with milk for them. By the way, one can often hear that the "milk" version is much more tender than with eggs.Try this simple recipe for dumplings without eggs.
You will need:
- flour - 3 cups;
- salt - 0.5 teaspoon;
- milk - 1 cup (from the refrigerator or at room temperature).
Cooking
- In a bowl, mix 2 cups flour with salt and pour milk.
- Stir the ingredients with a spoon until the mass is relatively uniform.
- Add the remaining flour gradually and continue to knead with your hands.
- Knead until the mass is taut and elastic and sticks to neither the hands nor the surface.
- Leave the dough to rest for half an hour (as long as possible), tightly wrapping it in cling film.
Dumplings with potatoes from dough without oil
We stick delicious yogurt dumplings with potatoes without eggs - this is another simple option. It will turn out gently to taste and very satisfying.
You will need:
- water - 200 milliliters;
- salt - 1 teaspoon;
- flour - up to 3 glasses;
- onions - 3 pieces;
- potatoes - 9 medium;
- vegetable oil for frying onions - 3 tablespoons.
Cooking
- Mix water with salt.
- Make a hole in the sifted flour, and gradually adding liquid, knead a thick dough.
- Put the dough in the bowl, close the lid for half an hour.
- Peel the potatoes, arbitrarily chop, boil and drain the water into a separate bowl.
Mash it by adding potato broth to it. - Finely chop the onion, fry it in vegetable oil and stir in mashed potatoes.
- Stick the dumplings.
- Pour about two liters of water into a large low saucepan, bring to a boil, salt and dip your items into it. Cook 4 minutes after surfacing (without boiling up).
You may notice that there are enough ideas about cooking, and it won’t be boring even if you don’t add the usual ingredients. It’s not difficult to make dough for dumplings in water without eggs (or you can use milk or kefir), it is quickly mixed, and you will see: the finished dish tastes great. Most likely, such dumplings will really please your loved ones.
