Step cooking
- To begin with, we extract the butter weighing 325 g from the refrigerator so that it softens. Then we take 500 g of premium flour and sift it through a sieve.
- To the sifted flour add 1 tsp. salt and mix thoroughly.
- Melt the butter weighing 50 g in a water bath and let it cool to room temperature.
- After the oil has cooled, pour it into a dry mixture of flour and salt. Then mix everything.
- Add 250 ml of cold water to the ingredients and knead the dough.
- The resulting dough is put in a bag or wrapped with cling film and put in the refrigerator for half an hour.
- After 30 minutes, we take out the dough and put it on a board for rolling, previously sprinkling it with flour. Using a knife, we slightly cut the dough into 4 identical parts.
- We roll it in such a way that we get 4 thin petals.
- In the center of the dough we put 325 g of butter at room temperature and cover it with the resulting petals.
- Using a rolling pin, we roll out the dough with butter until a layer of medium thickness is obtained.
- The edges of the resulting layer are folded in 2 parts and continue to roll it.
- The finished layer of dough is folded into a rectangle, wrapped with cling film and sent to the refrigerator for 1 hour.
- After the specified time, we take out the dough from the refrigerator, sprinkle it with flour and roll it in the same way as for the first time.
- Then again we hide the dough in the refrigerator for 1 hour and repeat the procedure again.
Ready dough can be used to prepare not only puff pastries, but also meat pies or puffs, adding any of the filling options you like to them. It can be stored in the refrigerator for up to 5 days, and if you place the dough in the freezer, it will be suitable for use for about 3 months.
