Step cooking
- The dough preparation process begins with the dissolution of the yeast. In a deep bowl, pour 1 tsp. dry yeast and 2 tbsp. l sugar, stirring a little.
- To a dry mixture of yeast and sugar, add about 100 warm water. You can warm it in a microwave or kettle. In no case should the liquid be too hot or cold, because then the yeast will not dissolve. Mix the ingredients thoroughly.
- In a bowl for yeast, you can add 1 tbsp. l flour with a slide, thoroughly mixing the ingredients.
- After that, pour the remaining 200 ml of warm water. It's okay if there are small lumps left.
- We cover the vessel with yeast with cling film and leave it to stand for 10 minutes. During this time, the yeast will become active.
- After 10 minutes, remove the cling film, and if the yeast has risen slightly, this indicates their good quality and that they work. If the yeast did not rise in 10 minutes, then adding them to the dough makes no sense, it is better to repeat the procedure with other yeast. Mix and pour the yeast into a larger deep bowl. Add 1/4 tsp. salt and stir well with a tablespoon.
- Add about 100 g of sifted flour to the yeast. It is required to sift it so that the flour is saturated with oxygen, which will help the dough become even more magnificent. Mix with a spoon, trying to dissolve the lumps. But if you can’t completely get rid of them, that's okay.
- Cover the sponge with cling film and leave for 30 minutes to infuse in a warm place. If the room is cool, then we pour warm water into a large bowl and put the dough on top of it.
- In half an hour, the sponge will increase several times.
- Add 60 ml of vegetable oil to the dough, stirring a little with a spatula.
- Add the remaining 400 g flour to the dough, sifting it through a sieve. Knead the dough in a deep bowl with a spatula.
- After the dough has gathered a little, we shift it to a table or a special mat for kneading the dough. Preliminarily sprinkle the surface with flour. Knead the dough for about 7-10 minutes.
- The finished dough is soft and elastic. Do not overdo it with flour, because if there is too much of it, the dough will rise poorly.
- Lubricate the dough with a small amount of vegetable oil and also lubricate a deep bowl at the bottom and from the inside. We cover the vessel with cling film and put it in a warm place so that the dough can rise. It is recommended to infuse the dough for at least 1 hour.
- After 60 minutes, the dough is ready, and you can make pies out of it. As a filling, you can use poppy seeds, cherries, and also make them with potatoes, mushrooms and other products that you like.
