Step cooking
- In a bowl for kneading dough we place 220 grams of butter. Oil should be cold, I get ours from the refrigerator. Instead of butter, you can use margarine, but when choosing these dairy ingredients in a supermarket, pay attention to the expiration dates of products, buy fresh ones. It will be nice to know the manufacturer, use those that are not in doubt and you used them in your kitchen before.
- We take a knife, cut the butter in small pieces directly in a bowl, then add 150 grams of flour, after sifting it directly above the bowl with butter through a sieve.
- Mix the dough, rub it with your hands, put it in one lump, put in a bowl and set aside.
- Sift 350 grams of flour through a sieve into another bowl, add 0.5 teaspoon of salt, mix. Buy flour for puff pastry from trusted manufacturers, the highest grade, this will ensure the quality of the puff product.
- Pour 160 ml of cold water into a glass, drive one egg in, mix well with a fork, add a tablespoon of 9% vinegar.
- Now we make a depression in the flour, add some water with vinegar, gradually kneading. You need to do this in two or three steps to get another dough.
- Knead the dough on the table, it should turn out soft and elastic. Both types of softness test are the same.
- We roll out the second dough on the table with a layer of approximately 25 cm.
- Put dough with butter on it.
- We wrap it in an envelope, turn it over, squeeze it a little, leveling it, wrap it with cling film and send it to the refrigerator for 30 minutes.
- After 30 minutes, we take out the dough from the refrigerator, put it on the table with the seam down, roll out a 25 to 25 cm layer, after sprinkling flour on the table. Roll out so that the two tests are evenly distributed.
- Again we fold it with an envelope, put it seam down, put it in a plastic bag, and send it to the refrigerator for 30 minutes.
- After 30 minutes, we take out the dough from the refrigerator and do the same actions with it as in the previous case. Again, send to the refrigerator for 30 minutes.
- After the time has passed, we again take out the dough from the refrigerator, roll it with a layer of 25 by 25 cm, now we just turn it into a tube, cut it in half. The dough is ready to use.
Such a dough will be just a godsend for those who do not like to cook pastries for a long time. It makes excellent pies, puffs, pizzas, croissants, rolls and even pasties.
