Step cooking
- To start, slightly warm 200-250 ml of water in the teapot, to about 40 ºС. Then pour the water into a deep bowl, place about 25-30 g of fresh yeast in it, then add 1.5-2 tbsp. l sugar and 1 tsp. salt. Mash yeast well in water with a whisk until smooth.
- Using a sieve, gradually sift first 200 g of wheat flour, and knead it with a whisk all the time. Then pour in a bowl about 2-3 tbsp. l vegetable oil, sift another 200 g of flour and knead the dough with a whisk until possible. Instead of vegetable oil, you can use olive. When the dough thickens well, knead it with your hands.
- Sprinkle the working surface with a small amount of sifted flour and transfer the dough onto it. Then knead the dough with your hands until a homogeneous lump for 7-10 minutes. If necessary, add a little flour so that the dough stops sticking to your hands and surface. Place the smooth dough on a flat plate and cover it with cling film or a kitchen towel. Leave it to approach for about 30 minutes at room temperature. After this time, the soft and tender dough is ready to use. Roll it into a thin layer and proceed to the filling.
To prepare a softer and more airy dough, you can use fresh milk instead of water. And for lovers of hard and crispy crust on pizza, water as a part of the dough is ideal.
