Step cooking
- Heat a little 125 ml of milk in the microwave so that it is not hot, but warm. If there is no milk, then you can cook the dough in plain water. Add 20 g of pressed or 11 g of dry yeast to warmed milk. We put another 20 g of sugar and mix well. Leave to stand for 15 minutes at room temperature.
- While the yeast mixture is infused, lay 3 chicken eggs at room temperature in a deep bowl. Add to them 125 g of sour cream 20% fat. If you take less fat sour cream, then the dough may turn out to be liquidy.
- In a bowl with eggs, put 50 g of ordinary sugar and 10 g of vanilla. Mix everything thoroughly until smooth, using a whisk. Homogeneous mass can be achieved faster if you whip everything with a mixer. We add activated yeast to a homogeneous egg mixture and mix everything well again.
- Sift through a sieve 650 g of wheat flour. Then we add it portionwise to the vessel with other ingredients. After each addition of flour, knead the dough. While it is still liquid, it is more convenient to knead it with a whisk. When the consistency of the dough becomes more elastic and dense, then knead with hands.
- Leave the mixed dough in a bowl, covering with a kitchen towel. Let it stand for a quarter of an hour at room temperature.
- When the dough is infused a little, it will slightly increase in size. Add to it 4 g of salt and 100 g of soft butter. Preliminary, it is better to cut the butter into small cubes, so that it is easier to knead in the dough.
- Knead the dough again and cover it with cling film. Leave in a warm place for 1 hour until the test is doubled.
- Sprinkle a little flour on a wooden board and put the dough on it. We give it a rectangular shape, flexing hands. We fold the rectangular dough with an envelope. Sprinkle flour on the board, put the wrapped dough and cover with a bowl. Leave it to stand for 20 minutes.
- After 20 minutes, similarly unfold the dough, making it a rectangle. We wrap it in an envelope and leave it under a covered bowl for 20 minutes.
- After 20 minutes, the dough is ready, it can be rolled out and pizza made with any filling. It is soft and supple.
