Step cooking
- We peel one kilogram of potato, wash it under the tap, cut it into small pieces, put it in a pan, fill it with cold water and put on fire. Bring to a boil, add two bay leaves, one teaspoon of salt, reduce heat, leave to cook until cooked.
- One large onion weighing 200 grams is peeled, washed under running water, cut into quarters on a cutting board.
- We put the pan on the fire, pour 50 ml of refined vegetable oil there, when the oil is warmed up, send the onion into the pan, fry it to a soft, translucent state. We place the fried onions in a separate container, remove so far to the side.
- We begin to prepare the dough for flat cakes. To do this, break one chicken egg into a separate bowl, beat it with a whisk a little.
- To a beaten egg we add 50 grams of butter softened in advance in the microwave, one teaspoon of sugar and salt, again, beat well with a whisk.
- Sieve wheat flour in an amount of 300-400 grams through a sieve, add to the bowl to the milk-cream mixture, add gradually, in parts. We observe the consistency of the dough, because the quality of flour is different, so it can be a lot or, conversely, a little. We need to knead a soft, elastic dough.
- Knead the dough very carefully for 5-8 minutes.
- Then wrap the dough in cling film and leave at room temperature for 20-25 minutes.
- Meanwhile, the potatoes have already been cooked. Strain the water from it, remove the bay leaf, push it to a puree consistency. Add to the mashed potatoes 50 grams of butter and 130 ml of pre-heated hot milk. Pushing the pusher again.
- Now add the fried onions, a little salt and 2 pinches of black pepper, mix until smooth. The filling for the cakes is ready. We cover the pan with the lid filling, remove to the side.
- 20 minutes have passed, we return to the test. It had a good rest, now we roll it into a sausage and divide it into 16 equal parts.
- We roll each part into a ball. Lightly sprinkle flour on the working part of the table, roll each ball into a very thin cake.
- We put a dry frying pan on the fire, put a tortilla on it and fry on both sides until slightly golden. If air bubbles appear in this case, you can easily pierce them with a fork so that air escapes.
- In a microwave, melt 70 grams of butter, and grease each cake with butter with a kitchen brush. We spread the cakes on a plate, cover with a towel so that they do not dry out, but are soft.
- When all the cakes are baked, go to the filling. We place the tortilla on a chopping board, put two tablespoons of potato still warm filling on one half of it, spread it with a spoon, cover with the other half and press down a little with the palm. And the first kystyby is already ready.
