Cooking dough
- We drive one egg into a convenient dish, add a pinch of salt and mix so that the protein combines with the yolk. If desired, in addition to salt, you can put various spices, dried herbs, chopped fresh herbs.
- Gradually add semolina, you will need about 4-5 tablespoons. Mix the mass - we need to get a homogeneous dough without lumps. Cover with a lid or cling film and leave to swell for 10 minutes. The dumpling dough is ready, you can add it to the soup. Instead of semolina, you can add the same amount of flour.
Cooking soup
- Soup dumpling broth can be from any meat. We can offer you a simple chicken broth soup option. To do this, put a pot of water on the fire (1.5-2 liters is enough), let it boil.
- Cut into small cubes 500 g of chicken breast and send into boiling water. Add 3-4 peas of allspice, two bay leaves. After the water with meat boils, cook over low heat for 5-7 minutes. Peel the onion, rinse, cut into small cubes. Peel the carrots, rinse, rub on a coarse grater.
- Peel 4 potato tubers, wash, cut into cubes about the same size as meat. Potatoes are sent to the pot and cook for 5-7 minutes. We put the pan on the fire, pour 1-2 tablespoons of vegetable oil, add 30 g of butter, let it warm. Add chopped onion, fry until golden brown.
- Add carrots to the onion, fry until soft, stirring occasionally, remove from heat. Send the frying to the pan, mix. Add salt, ground pepper to taste.
- We take the dough for dumplings - during this time it is well infused, swollen. It can be put in a pastry bag, or pick half a teaspoon and send to a boiling soup.
- Let the soup boil for another three minutes and serve. Pour into portioned plates, add chopped parsley and garlic as desired.
