Premium flour | 250 g |
Cold unsalted butter | 125 g |
Chicken Yolk | 1 PC. |
Cold water | 1-2 tbsp. l |

Step cooking
- Cut unsalted butter (125 g) into small cubes and send to the bowl of the combine.
- Sift flour of the highest grade (250 g) and add to the oil.
- Grind the ingredients in the combine in such a way that the mixture as a result looks like bread crumbs.
- Next, add chicken yolk (1 pc.), Salt (0.5 tsp), 1-2 tbsp. l cold water. It is important that the water is as cold as possible, so it is recommended to send it to the freezer before cooking.
- Turn on the combine and grind all ingredients again. In the end, you should get a fairly friable dough, so do not be embarrassed by such a consistency. To make it more elastic, you can add a little more water.
- Put the finished dough on the work surface and collect it to make a cake.
- Wrap the cake in plastic wrap and refrigerate for 30 minutes.
- Cut baking paper so that it covers the bottom of the mold. On top of this paper put the chilled dough and carefully roll it into a layer larger in diameter than parchment paper.
- Screw the dough with parchment onto a rolling pin and carefully place in a baking dish. If the edges are too ugly, they can be trimmed.
- Submit the test form again in the refrigerator for 30 minutes.
- Then cover the dough with parchment paper, pour dry rice (2-3 cups) on top, send it to the oven preheated to 170 degrees for 20 minutes. Then remove the paper with the load and bake the base for another 15 minutes.
- The basis for baking a French open pie is ready. It remains to prepare the filling, fill it with the form and send the cake to the oven, preheated to 170 degrees, for 15-20 minutes.
