Step cooking
- We prepare the ingredients and put them in containers in the right proportions for convenience. Sift flour through a sieve into a large bowl.
- We make a deepening in the flour, add two yolks, salt and add water in parts. First, add a few spoons, start to mix, and if necessary add more water. It is important that the water is cool enough, even icy.
- Stir the dough with your hands for about 10 minutes, until we roll up a small ball.
- Wrap the dough in a film and leave it on the table for about 30 minutes. After 30 minutes, knead the dough in your hands.
- Sprinkle flour on the work surface and start rolling out the dough with a rolling pin. The dough should be very thin, almost translucent. When the dough is rolled out, cut it in half and remove one part to the side.
- Sprinkle the second part with flour and cut into small strips. This is best done with a pizza knife, but it can be cut with a regular sharp knife.
- If you plan to cook the noodles immediately, then it does not need to be dried. If you plan to cook it on another day, then we hang the noodles on a grid and dry in the oven at a temperature of 200 degrees for about 10 minutes. After 10 minutes we take the noodles out of the oven, it will be dry. After that, it can be used for another 10 days.
