Step cooking
- Drive a chicken egg into a deep bowl or bowl of the mixer, add a pinch of salt, mix with a mixer, blender or spoon.
- Continue to whisk and add 235 ml of cold water. Soak water for several hours in the refrigerator or an hour in the freezer before use. It is better to use live water, for example, from a well, or purchased mineral water.
- Beat with a mixer for several minutes until lush foam is formed. At the end, add 45 ml of vegetable oil and turn off the mixer almost immediately. Use odorless vegetable oil so that the finished chebureks do not have an extraneous taste. We need to get a mixture with a lot of lush foam without eggs, water and oil.
- Sift 450 g of white wheat flour into a deep bowl, make a hole in the middle and pour the foam. Be sure to use premium flour. We recommend sifting it several times so that it is well saturated with oxygen.
- Mix with a fork until the ingredients in the dough mix together. When the flour has absorbed all the liquid, we will knead it in a bowl with our hands.
- When the dough is formed into a single kolobok, put it on the work surface and knead for several minutes until elastic. It is not necessary to add flour during kneading, since properly kneaded dough will not stick to your hands.
- From a well-kneaded dough we form a ball, put it in a bag and send it to the refrigerator for one hour. If you wish, you can leave it for a longer time, for example, until the morning, and you can use it for its intended purpose.
During the formation of pasties, cut off the third part of the dough and divide it into portioned pieces. The rest of the dough is put in a bag and sent to the refrigerator. From portioned slices, roll flat cakes with a thickness of not more than 1 mm.
To make the filling juicy, it is necessary to mix the same amount of chopped onion and minced meat, and add enough water to make the minced meat liquid. Fry chebureks in a large amount of vegetable oil, so that they are well browned on all sides. So that the pasties do not absorb oil during frying, we recommend adding one tablespoon of vodka to the dough. It creates a grease repellent effect. After frying, spread the pasties on a paper napkin, and then on a flat dish.
