Step cooking
- Pour 400 ml of kefir at room temperature into a deep bowl. In no case should you use a cold fermented milk product, since then the dough may not work.
- Add 1/2 tsp to kefir. salt and 1 tbsp. l sugar without top.
- Pour into a bowl with kefir 100 ml of vegetable oil. Thanks to vegetable oil, the finished dough is soft and not stale. Odorless oil is recommended.
- Sift about 700 g of flour through a sieve and gradually add to kefir. It is absolutely necessary to use sifted flour so that it is better saturated with oxygen, and the dough turns out more magnificent and softer. While adding flour, the dough does not stop stirring with a tablespoon.
- While the dough turns liquidy and sticks to your hands. Pour the remaining 100 g of flour onto a clean table and spread the dough out of a bowl. Actively knead it with your hands until it stops sticking to your hands and becomes soft and elastic.
- We roll out a large ball from the dough and ram it a little. To prevent it from sticking, sprinkle flour on top of it.
- We roll out the dough with a rolling pin so that its thickness becomes about 1-1.5 cm.
- To make the dough saturated, sprinkle the rolled cake about 1/2 tsp. soda in different places. Sprinkle over the entire area of the dough.
- After that, wrap it with an envelope, slamming it on top a little.
- Again, roll out the dough with a rolling pin and evenly sprinkle it with another 1/2 tsp. soda. Re-fold the envelope. We repeat this procedure again.
- We leave the dough to lie on the table for 30-40 minutes, covering it with a clean towel or napkin. It is also possible to leave the dough to infuse in a deep bowl, covering it with a napkin.
