Step cooking
- On a coarse grater, rub 1 large carrot. We shift it into a deep bowl. Finely chop 70 g of leek. If you did not find one, then it can be replaced with several branches of green onions or a similar amount of onion. Shredded onions are transferred to a bowl with grated carrots.
- First, we press with a knife 2-3 cloves of garlic, then cut them into small pieces.
- We wash a bunch of cilantro under running water, chop it finely and transfer it to a bowl with other vegetables.
- Pre-boil the rice and use it for the preparation of meatballs 200 g. Put it in a bowl with vegetables.
- In this recipe, instead of minced meat, 200 g of okara is used. It is soya mince. Add a slightly damp okara to the bowl with the rest of the ingredients.
- Add to the bowl 1 tbsp. l corn starch. If necessary, it can be replaced with potato. The main emphasis in the preparation of such meatballs is given to spices. Add to all the ingredients to taste salt and black pepper. We also season all 1 tsp. ground cumin, a similar amount of ground coriander, 1/2 tsp. dried garlic and put the same amount of paprika.
- All products in the bowl are thoroughly mixed. Do it better with your hands so that the mass is well connected and becomes viscous. Stuffing should be moist enough so that it can easily form meatballs. We squeeze a small amount of minced meat in our hands and sculpt small meatballs. It is required to sculpt them well so that they do not break up during the cooking process. Meatballs should be small in size, as large meatballs are more likely to fall apart.
- After all the meatballs are formed, grease the baking dish 2 tbsp. l olive oil. You can distribute the oil all over the bottom and walls using a silicone brush.
- In the greased form we spread the formed meatballs. Prior to frying is not required. At this time, turn on the oven 200 degrees, so that it warms up well. On top, grease the meatballs with a small amount of olive oil. We put the meatballs in the oven, preheated to 200 degrees, for 10 minutes.
- While the meatballs are baked, we are preparing the sauce. We put the pan on the stove to warm up and after a few minutes we spread 400 g of tomatoes in it in our own juice. Add about 50 ml to the pan.
- In the process of frying, add 1 tsp to the sauce. sugar, salt and black pepper to taste. Season the sauce with 1/2 tsp. dried garlic.Mix everything well with a spatula for even distribution of spices. After boiling tomatoes turn off the stove, the sauce is ready.
- After 10 minutes we take the meatballs from the oven and pour them on top with tomato sauce. We lower the temperature in the oven to 180 degrees and send meatballs to cook for 10-15 minutes.
- After a quarter of an hour, the meatballs with rice are completely ready. We take them out of the oven, transfer to a plate and sprinkle with fresh herbs on top. You can serve meatballs with mashed potatoes and any side dish at your discretion. Such meatballs differ in structure from meat, their structure is more delicate.
