Step cooking
- Measure 1/3 of a standard glass of rice and rinse it well under water. It is better to repeat the washing procedure 2-3 times. If you like rice to feel good in meatballs, then take half a glass. Pour the rice into a small saucepan and pour a glass of water (incomplete on the finger - 200 ml). Put the saucepan on the stove and boil the rice until half cooked. Do not cook rice until cooked, as it will fall apart when stewed. It takes no more than 7-8 minutes after boiling.
- Drain rice water through a sieve. Put in a bowl to cool slightly.
- Peel a medium-sized onion and rinse it under water.
- Cut the meat into pieces that will fit into a meat grinder. Install a meat grinder and pass the chopped meat and onion through it. Pour the cooled rice into the minced meat, and mix everything a little.
- Salt and pepper the minced meat to taste, and also add a little dry garlic (if not, just squeeze a couple of cloves of garlic).
- Stuffing mix well. You need to beat it off with your hands so that it becomes homogeneous and does not fall apart when extinguished. You can even lift it over the bowl and drop it sharply, hitting the bottom. If the minced meat is dry, pour a couple of spoons of cold water into it.
- Moisten your hands with water and form small balls of minced meat. Use some portioned spoon to make the meatballs the same size. Sift 4-5 tbsp in a plate. l flour and roll meatballs in it.
- Put a frying pan on a fire and pour vegetable oil into it. Heat well. Put meatballs in a pan and fry them on both sides for 1-2 minutes over medium heat, just so that a light brown crust appears.
- Boil water. Measure 250 ml of water, pour it into a larger container.
- Take a teaspoon of tomato paste with a large slide and stir it with boiling water.
- Pour the meatballs with the mixture. If there is little water, you can add more. Water should not cover meatballs, but should reach at least the middle of the ball. Salt and pepper the water.
- Cover and simmer for about 15 minutes over low heat.
- After 15 minutes, dissolve 1 tbsp. In slightly cooled water (120-130 ml). l sour cream and 1 tbsp. l flour. Everything needs to be mixed very well so that there are no lumps.
- Remove the lid from the pan and add 3-5 peas of black pepper and 1 bay leaf, and then pour the previously obtained mixture of water, sour cream and flour. Stir a little. Close the lid and simmer for another 10-15 minutes.
- Turn off the fire. Meatballs are ready! Try them soon!
