Step cooking
- Rinse 200 g of rice several times under running water, add 300 g of water to it and boil until half cooked. Cook on low heat after boiling under a closed lid for 10 minutes, then turn it off, and without opening the lid, let stand for another 20 minutes. Allow to cool.
- In 700 g of pork and ground beef add boiled and cooled rice, 1 tsp. salt, 0.5 tsp black pepper and 1 egg. Stir the minced meat well until all the ingredients are fully combined.
- Peel 2 large onions and 2 medium carrots and rinse. Rinse the bell peppers and core. Chop the onion in half rings or a cube, grate the carrots on a coarse grater, chop the pepper in large strips.
- Take a large pan or pan with a thick bottom, pour 30 g of vegetable oil and heat. Put the prepared vegetables in a hot pan, cover and simmer over medium heat for about 15-20 minutes, stirring occasionally.
- Next, add 0.5 tsp. black pepper, 100 g tomato paste, 1 tsp. salt and 40 ml of water. Mix well until the tomato paste dissolves.
- Form the balls of the desired size from the prepared meat. In stewed vegetables, make small indentations in which to place the meat balls.
- Cover the balls with vegetables on top.
- Add 2 allspice and 2 bay leaves. Cut 50 g of any greens and add half to the pan to vegetables and meatballs.
- Cover tightly and simmer over medium heat for 25-30 minutes. Turn off the stove and let stand for another 10-20 minutes. Meatballs are ready, bon appetit.
Cooking and Serving Recommendations
- Forcemeat use any at your discretion.
- Meatballs will be easier to form with hands pre-moistened with water.
- Rice can be combined, but keep in mind that some rice varieties differ in cooking time.
- Take any spices and herbs that you like best.
- For spiciness and piquancy, you can add red ground pepper to the dressing.
- Such meatballs can be prepared in a slow cooker. In this case, it is possible to use the “delayed start” function.
- Serve meatballs with sour cream, mashed potatoes and fresh vegetables or salads. Garnish with fresh herbs.
