Step cooking
- To cook meatballs, you can choose the meat to your liking. You can buy it ready-made or make it yourself by passing the meat through a meat grinder. Homemade minced meatballs are much tastier and better sculpted. You can also mix different types of meat for minced meat. Place approximately 1.2 kg of minced meat in a deep bowl. Peel one large onion and rinse. Then chop the onion with a grater, or cut into small cubes with a knife. Pour the onion into a bowl of minced meat. Add about 2 tbsp to the minced meat. l with a slide of semolina.
- In one ingredient, beat one chicken egg. Then salt the minced meat, pepper with black pepper to taste, add 1 tsp. Provencal herbs and about 1/3 tsp nutmeg. Herbs and spices you can use at your discretion. Mix all the ingredients well until smooth, you can do it by hand. Cover the bowl with cling film and leave the minced meat for about 30 minutes so that it is infused and marinated.
- After this time, put the minced meat on a chopping board, slightly knead it with your hands and level it on a board in the shape of a rectangle. Divide the meat rectangle into approximately 8 equal parts. Then also divide the meat into equal parts across. In such a simple way, you will get almost even squares for meatballs. Now form balls from them.
- Sift about 2-3 tbsp into a separate plate. l with a hill of wheat flour and roll in it each meat ball. Pour about 3-4 tablespoons into a deep pan. l vegetable oil and heat it. Put meatballs in a pan and fry them on both sides until golden brown over medium heat. You can turn meatballs with two forks. You can use part of the meatballs, and freeze the rest. - Make the meatball sauce. To do this, pour 1 tsp in a deep bowl. flour and dilute it with a small amount of water so that there are no lumps. Then add in a bowl 2 tbsp. l tomato paste and stir with a whisk. Sprinkle the mixture with sugar and salt to taste.
- In a bowl add 150 g of tomato sauce and a little sauce of bell pepper, mix well until smooth. In this case, you can also use adjika or any other sauce at your discretion. Sour cream is good. Then gradually pour about 1 liter of water into the bowl, stirring constantly with a whisk. Water is needed so that all meatballs are covered with sauce.
- Pour the prepared sauce into the pot with meatballs, put on the stove and bring to a boil. Then cook the meatballs in boiling water for another 15 minutes over medium heat. Sprinkle the finished meatballs at will with finely chopped greens, and serve with any garnish of your choice.
