Step cooking
- Pour half a cup of kefir into a large bowl.
- Add 2 tbsp. l sour cream, 1 tsp sugar, a pinch of salt, 0.5 tsp. soda.
- Add 50 g of softened butter to this. And begin to knead the dough with a spoon.
- Sift 2.5 cups flour and gradually add the dough. When the dough cannot be kneaded with a spoon, continue to knead it with your hands, laying on a dusted table.
- If there is little flour, you can add more. The dough should be very soft, obedient, elastic.
- Put the dough in a bowl and let it rest for 30-40 minutes.
- Wash the meat (250 g), dry and cut into small cubes.
- Peel potatoes (2 pcs.) And onions (1 pc.), Wash and cut into small cubes.
- We put the potatoes, meat and onions in one bowl, salt and pepper to taste and mix well.
- We crush the dough again. We tear off balls the size of a tennis ball from it. We take one ball and roll it with a rolling pin on a dusted table into a cake with a diameter of about 20 cm.
- Put about 2 tablespoons of the filling into the center of the tortilla.
- We pinch the cake in three places so that we get a triangle. We continue to pinch well towards the center so that a small hole remains in the center.
- We cover the baking sheet with parchment paper for baking and put our pies on it.
- In each pie, pour 2 tbsp. l broth.
- Take one yolk. Beat it lightly with a fork and begin to gently brush the pies with a brush.
- Preheat the oven to 180 degrees C and put the pies in it for 30-40 minutes. You need to look at your oven and the size of the pies. If the pies are larger, then baking can be increased to 50-60 minutes.
- When the pies are ready, remove them from the oven and grease with melted butter (50 g) while still hot.
- Leave the oil to absorb a little more for 5-10 minutes.
Ways of decorating and serving
Sauces for pies are now becoming increasingly popular. They emphasize and complement the taste of pies.
Garlic dressing consisting of crushed garlic, ground black pepper, salt and vegetable oil is very suitable for Tatar pies. If it seems thick to you, it can be diluted a little with water.
Mushroom sauce, which is prepared on the basis of the broth with the addition of boiled dried mushrooms, finely chopped and fried onions and flour roasted to golden color, which makes the sauce thicker, is also well suited.
