Step cooking

- Freeze a piece of lean beef tenderloin tightly wrapped in cling film in the freezer. The meat is pre-washed, dried, films removed.

- Transfer to a deep plate.
- Finely chop the cilantro stems (7-8 pcs.), Which will create an additional aroma, add a juicy crispy note to the dish. Pour chopped cilantro to the meat. With cilantro leaves, you later decorate the dish when serving.
- Cut the capers very finely (1 tsp). Transfer pieces of capers to a plate with a tartare workpiece.
- Wash the thin stems of young green onions (3-4 pcs.), Cut the white part of the stems very finely, add to the meat.
- Cut pickles (1 pc.) Into layers along the fruit, and then into small cubes about 3 mm in size. Pour into a bowl.

Cooking Garlic Croutons
- Cut slices of black "Borodino" bread into large cubes, each slice into 16 pieces.
- Heat the pan well. Put butter (20 g) in a pan.
- Peel the garlic (3 cloves), chop finely.
- Put slices of bread in preheated butter. Fry for 2-3 minutes. Croutons should absorb the oil and fry a little on all sides (mix).
