Step cooking
- We start making cheese cakes with kneading dough. Pour 200 ml of kefir at room temperature into a deep bowl. We add 1/2 teaspoon of sugar, salt and baking soda to kefir.
- To repay soda, all products are actively mixed with a spatula. During mixing, a hiss should be heard.
- Add about 150-200 g of wheat flour to kefir. Do not immediately add all the flour, it is recommended to pour it in several tablespoons and stirring. The dough should turn out to be a liquidish, but uniform consistency.
- On a coarse grater, we rub 200 g of hard cheese to your taste. Add to the dough and mix.
- When the dough becomes difficult to mix with a spatula, put it on a special mat for kneading the dough. If this is not the case, then knead the dough on a regular kitchen table. Sprinkle the surface with the remaining half of the flour (about 150-200 g) and spread the dough, kneading it actively. Ready dough should not stick to your hands and be soft.
- We proceed to the preparation of the filling. On a wooden board we cut 100 g of hunting sausages with rings 3-5 mm thick.
- Finely chop 30 g of fresh parsley and mix with chopped hunting sausages. If you do not like parsley, you can replace it with any other greens. You can also choose another filling for cheese cakes to your taste.
- We rub the rolling pin with flour and roll out the dough with a thickness of 0.5-0.7 cm. To make the cakes of the same shape, you can use a small lid with sharp edges, which we cut out circles. We remove the excess dough to the side, then roll some more flat cakes out of it.
- On one half of the tortilla we spread the stuffing from hunting sausages, fold the tortilla in half and close the edges, like on a dumpling. Knead a cake in your hands, forming a ball, then roll it out slightly with a rolling pin, giving it a round cake. Repeat similarly with the remaining cheese cakes.
- Heat a skillet over medium heat, pouring 1-2 tbsp. l vegetable oil. In the process of frying, you need to add a little oil, so it will take 3-4 tbsp. l Put cakes on a preheated pan and fry on each side until golden brown.
- After a golden crust forms on both sides of the tortilla, cover the pan with a lid and leave it for a few minutes. This is required so that the cakes are well fried inside.
- We put the finished cakes on a plate with a paper towel so that excess fat is gone. Cheese cakes are crispy and soft and tender inside. Serve cakes possible with the first dish or on their own, sprinkling with a small amount of fresh herbs.
