Ingredients
- Pork ribs - 2 ribbons
- Rice - 1 tbsp. l
- Onion - 0.5 heads
- Garlic - 1 head
- Clove - 6 pcs.
- Black peppercorns - 10 pcs.
- Anise / Fennel Seeds - 6 pcs.
- Star anise - 1 star
- Fresh ginger root - 10 cm
- Cardamom - 2 pcs.
- Soy sauce - 3 tbsp. l
- Vegetable oil - 5 tbsp. l
- Sugar - 1 tbsp. l
- Salt - 1 tbsp. l
- Honey - 1.5 tbsp. l
- Dry garlic - 1.5 tsp.
- Ground hot pepper - 0.5 tsp.
- Tomato paste - 1 tsp.
Step cooking
- First, divide the pork tape into separate parts. To make the ribs large and juicy, divide the tape into pieces of 3-4 ribs.
- The secret of tender ribs in preliminary boiling. Therefore, put on a stove a pot of water, heat and lower the ribs in boiling water. Water is salted and sugared.
- To make the meat fragrant, add spices to the pan: 6 buds of dried cloves, 10 peas of black pepper, 6 seeds of anise / fennel, 1 star anise star.
- Wash the onion head, cut in half. Cut the half into 2 parts and put in the pan. Cut the head of garlic in half across the cloves and add to the ribs. With the last spice, add ginger root (about 10 cm), sliced into plates, into the pan.
- Now pour it into the pan 1 tbsp. l dry rice. The way to add rice when cooking pork was invented in Japan. Rice makes pork ribs soft and tender. Ribs are boiled for about 40 minutes. It is important not to digest the product: the meat should be soft enough, but not separated from the bones.
- While the meat is cooked, prepare the sauce. We will mix all the ingredients in a large bowl so that you can dip each rib into the finished sauce. Pour into a bowl 5 tbsp. l vegetable oil. Add a pinch of salt, a pinch of sugar, 1.5 tbsp. l honey, 1.5 tbsp. l dry garlic and 0.5 tsp. hot pepper. Put 1 tsp. tomato paste and 1 tbsp. l soy sauce. Mix everything thoroughly.
- Cover the baking sheet with foil to protect it from contamination. Remove the ribs from the pan with a fork and spread on a baking sheet. We prick each rib with a fork and dip it well in frying sauce from all sides. The ribs are especially tasty if you marinate them in the sauce and leave overnight.
- Lubricate the ribs with the sauce back on the baking sheet and pour the remaining sauce.
- We put the baking sheet in the oven, heated to 200 degrees. Bake the ribs for 20-30 minutes in a combined mode, combining convection and grill until a crispy crust forms.
- We take the finished ribs out of the oven, put them on a plate and serve hot.
