Step cooking
Cook broth
- Pre-cook the meat broth from 600 g of beef. To do this, wash the beef well and cut it neither coarsely nor finely. If cut too finely, it will not be so tasty and juicy.
- We put pieces of meat in a pan, pour 3 liters of cold water and put on fire. That's when the broth turns out to be tasty and rich. If you lower the meat in boiling water, then the protein in the meat instantly curls up, and all the juice remains in the meat, and the taste of the broth leaves much to be desired.
- If you want to get a transparent broth, then the meat must be soaked in water before cooking, changing it several times. The broth should be cooked over low heat, removing the foam that forms during cooking. Boiling water should not be added, otherwise the broth will become cloudy. Beef broth is cooked for about 1.5-2 hours. At the end of cooking, you need to remove the meat and strain the broth through a strainer, otherwise it will become cloudy.
Cooking beetroot
- One large carrot, three medium potatoes, one large beet, one large onion, clean and wash. We cut the potatoes into small sticks, put them in a bowl and fill them with cold water. Three beets and carrots on a coarse grater. Cut the onion into small cubes.
- Strained beef broth again set on fire. When it boils, add the potatoes.
- Preparing the frying. Pour 3-4 tablespoons of vegetable oil into a frying pan preheated over a fire and add chopped onions. We pass about 1-1.5 minutes, no more, stirring constantly. When the onion has become transparent, add the carrot to it. All this mix with a spatula.
- 2-3 minutes after you put the potatoes in the broth, add chopped meat to it. Cover and cook over medium heat.
- When the carrots become soft, remove it to the edges of the pan, freeing up space in the center, and put the beets in the center. Now in the center we will turn only beets, and then mix everything together.
- Beets have become soft. To preserve the color of beets, add 3 tablespoons of apple cider vinegar to the broth. Mix all the vegetables and add to the broth. Refueling is already in the broth. Now it's time to add salt to taste and 2 bay leaves. Leave for about 8-10 minutes over low heat.
- Another caveat: you regulate the balance of sour and sweet. If you like beetroot with some sweetmeat, add sugar to taste. If you like beetroot, add lemon juice or apple cider vinegar. This is a matter of taste. Well, 8 minutes have passed. Turn off our beetroot soup, close the lid and leave to insist for 20-30 minutes. Then it can be poured on plates.
- When serving, if desired, beetroot can be sprinkled with freshly cut greens and add sour cream.
