Step cooking
- Put 3 liters of drinking water on the fire in a pot with a capacity of 5-6 liters. Wash 800 grams of pork meat. Dip the meat in cold water, add 5-7 peas of black pepper for flavor. Cook until cooked. In the process of cooking, remove the resulting foam from the broth. Take the meat out onto a wide plate and set to cool (so that you can take it apart). Strain the broth through a thick sieve. Divide the meat into small pieces, return to the broth.
- Peel and finely chop 1 onion. You can use onions in both white and red varieties.
- Wash, peel and chop 2 medium carrots in small cubes. If desired, carrots can be grated, cut into cubes or strips.
- Clean well-washed root beets of red beet (2 pieces). Cut the vegetables into thin strips.
- Peel two cloves of garlic, finely chop. Heat 40-50 ml of vegetable oil in a frying pan. Add chopped onions and carrots to the butter. Fry until the onions are transparent, stirring for about 3-5 minutes.
- Pour the beet straw into the pan, mix. Add 150 ml of Bulgarian lecho. If you do not have such a preparation, add 2 tablespoons of tablespoon of 9% vinegar and 150 ml of broth from the pan to the pan. Instead of vinegar, you can take the same amount of lemon juice. The addition of an acidic liquid will preserve the bright color of the prepared beets. Stew under the lid over low heat for 10-15 minutes.
- While dressing is being stewed, put the broth with pieces of meat on the fire. Salt the broth to taste. Peel the washed potatoes (3 medium tubers), cut it into small cubes. Pour into a saucepan. Cook after boiling for 5-7 minutes.
- After 5 minutes from the moment of boiling the contents of the pan, add vegetable frying from the pan to it. Reduce the heat to small. Cook the beetroot until cooked (about 30-40 minutes).
- Try potatoes, carrots and beets for preparedness. If the vegetables are cooked, add finely chopped garlic and chopped dill to the dish (1 small bunch).
- Add 2 bay leaves, 1 pinch of red ground pepper. Turn off the fire. Let the dish brew for 10-15 minutes. Serve hot.
When served in each plate, you can add sour cream, dill, parsley, cilantro, herbs to your liking.
