Ingredients
- beets - 4-5 pcs.
- garlic - 3 cloves
- mayonnaise - 2 tbsp. l

Step cooking
- To begin, thoroughly rinse 4-5 small beets under running water. Place the beets in a saucepan and fill with water so that it completely covers the root crops.
- Boil the beets in a peel over medium heat for 20-30 minutes until cooked - it should be soft and easily pierced. You can also cook beets in the oven in foil. It will take a little more time, but at the same time, root crops will retain more useful properties.
- Cool the finished beets at room temperature, and then peel them with a knife. Then grate the peeled beets on a fine grater and place in a deep bowl. If necessary, squeeze out excess juice so that the salad does not turn out to be liquid.
- Peel 3 cloves of garlic from the peel and also grate it on a fine grater or pass through a garlic press. Add chopped garlic to a bowl with beets. If you want a sharper dish, use about 4-5 cloves of garlic. Salt the resulting mass to taste.
- In a bowl with beets, add 2 tbsp. l mayonnaise and mix well so that the mayonnaise is evenly distributed. Instead of mayonnaise, you can use sour cream or natural yogurt.
- Cover the bowl with cling film and put in the refrigerator for several hours so that the salad is well saturated, after which you can serve the dish to the table. Before serving, you can decorate the salad with a sprig of fresh herbs to taste.
Cooking options
If you want to complement and saturate the taste of light beetroot salad, you can add walnuts, prunes or raisins to its composition. In this case, the nuts need to be chopped and lightly dried in the oven or in a dry frying pan so that they do not get wet in the salad and feel good. Prunes should be softened in boiling water, and then cut into slices with a knife. Raisins also need to be softened.
In addition to these ingredients, you can add grated hard cheese of your choice, which will give the salad a delicate flavor. Serve the salad as an independent dish or as an addition to meat and fish dishes, as well as side dishes. You can also spread beets with garlic in mayonnaise on bread for delicious sandwiches.
