Step cooking
- First, peel the carrots from the skin, thoroughly rinse it, dry it, and then rub it on a coarse grater. If you like carrots, you can add more, if not, one carrot will be more than enough. We clear 3-4 cloves of garlic from the husk. Next cabbage needs to be chopped. This can be done with a large shredder or use a small manual one. Also, if necessary, you can just chop the cabbage with a knife. The main thing is that the cabbage should be chopped evenly and thinly. We shift the chopped cabbage into a deep bowl and set aside for a while.
- Next, proceed to the preparation of the marinade. Pour 1 liter of boiling water into a separate metal container, add 1/2 stack to it. sugar, 2 tbsp. l salt, black peppercorns, allspice black pepper, cloves and bay leaf. Pour 1/2 stack here. odorless vegetable oil. Mix and set on fire.
- While the marinade is boiling, we crush the chopped cabbage. It needs to be wrinkled until it makes juice and its hands become wet. In this case, you do not need to salt the cabbage. Then we pass the peeled garlic through a press and add it to the cabbage. Also, pour the grated carrots into the container with cabbage and mix everything well.
- As soon as the marinade boils, pour 1/2 stack into it. vinegar 9%. Next, remove the marinade from the heat and pour the cabbage. Using a potato pusher, gently ram the cabbage.
- After that, cover the cabbage with a plate of a slightly smaller diameter and put a load on top of it so that the cabbage is completely covered with marinade. In this form, leave the cabbage at room temperature until the morning.
- In the morning, we put the cabbage in jars, close the lids and transfer to a cool dark place. Such cabbage can be used as an addition to a side dish or for cooking other dishes, such as salads or pastries. Enjoy your meal.
