Cooking steps
Cooking Meatballs
- Take chicken breast, remove the skin from it and cut the loin. We will use bone with small meat residues to prepare the broth.
- Coarsely chop the dill and parsley greens and grind it to a homogeneous mass with the chicken using a food processor. You can also skip these ingredients through a meat grinder.
- In the resulting mass, add 1 chicken egg, 1 teaspoon of semolina, salt and ground black pepper to taste.
- Mix everything thoroughly until a homogeneous consistency.
- From the minced meat we make small portioned meatballs.
Cook soup
- In the pan we put the skeleton of chicken breast, which remained with us after cooking the meatballs, fill it with cold water and put it on the stove.
- Cook for about 40 minutes, periodically removing the resulting foam. After completing the preparation of the broth, the bones can be removed and the meat taken from them.
- We clean potatoes, carrots and onions; cut potatoes and onions into small cubes.
- Rub carrots on a coarse grater.
- Pour the vegetable oil into the pan and pour the onion. Fry until light golden brown, then add carrots and fry it with onions for a couple of minutes.
- We send such easy frying to the broth.
- Add potatoes to the soup and wait for the water to boil.
- Then we salt the soup, remembering that salt is already present in meatballs. And then we throw the meat balls themselves.
- Cook for 15 minutes on low heat, periodically removing pop-up foam.
- After this time, add a handful of pasta to the soup and mix them so that they do not stick together.
- Also add 1-2 heads of garlic, passed through a press.
- Bring the soup back to a boil and remove it from the heat. Cover with a lid and let it brew for 15-20 minutes. Soup is ready, you can serve!
