Step cooking
Broccoli puree soup with turkey meatballs is prepared very quickly, because the cooking process is carried out not in one, but in two pots at once. But at the very beginning of cooking, you need to wash and peel all the vegetables, as well as cut medium-sized pieces of turkey fillet.
Make minced meat
- In a bowl, skip the turkey fillet with one small onion and a clove of garlic in a meat grinder.
- Finely chop 2-3 branches of dill with parsley and add to the minced meat. Add a pinch of salt there and thoroughly knead the contents of the bowl.
- Form small balls from chopped poultry meat, in the amount of not more than one tablespoon.
Cook broccoli and meatballs
- Put two pots on the stove at the same time - a three-liter with 1.5 liters of water and a small saucepan with 0.5-0.8 liters of filtered drinking water on a small fire.
- Dissolve broccoli into small inflorescences, cutting off the stalk leg to the maximum.
- Lower the cabbage inflorescences into a pan with simmering 2.5 l of water over medium heat and slightly add salt.
- After 7-8 minutes from the moment of boiling cabbage, run the meatballs into the boiling water in a small saucepan.
- Drain the broccoli water and immediately (!) Cool the cabbage inflorescences under running cold water so that they do not lose the brightness of the color.
Making mashed soup
The current tendency to prepare first courses tends to add vegetable rather than dairy products - soy cream or rice milk to soups, cream soups and cream soups, especially when lactose-containing components are intolerant to adults or children.
- Knead the broccoli with a manual crush to a smoothie consistency.
- Pour 100 ml of soy cream and 50 ml of rice milk into mashed cabbage. Again, knead all the ingredients with a flea-crush, add a little salt and add 1 tsp. rice syrup to emphasize the taste of the dish. Put the broccoli pan on a small fire for warming.
Serving and decoration
Brightly colored and fragrant, well-heated broccoli puree soup is poured on portioned plates. In the center of each plate, make a small indentation with a spoon and put out ready-made 2-3 meatballs of turkey meat. On top of the dish you can sprinkle with finely chopped herbs or pour 2-3 drops of vegetable oil.Also, you can serve some white crackers or toasts to broccoli soup with meatballs.
